What about a boating holiday in Europe. Blakes and Hoseasons do these-similar thing to Norfolk broads boating holidays
A google search for "boating holidays in Europe" throws up some interesting ideas for France, Italy and the low countries

Your tastes sound like mine, so I will mention that when I visited Luzerne in Switzerland, I felt that it would be the ideal place for a honeymoon. Plenty of culture and history; plenty of natural beauty; yet space for the real "event" that involves just the two of you to take centre stage.
Personally, I think the train journey to Italy would be rather too long, unless you spent a day or so somewhere on the way. Getting to Switzerland by train is just the right length of journey, at least for people who appreciate train travel.
Hint: to keep costs down, explore the voyages-sncf web site. This is the official site for French railways, and has details of services to some neighbouring countries. Near the bottom left of their home page you see a selection of flags: click on the Union Jack and you get the text in English. And look out for the advance-purchase tickets they call PREMS: these can be ridiculously cheap. For best fares, always get the site to quote fares in euros rather than sterling.
You should also explore the deutsche bahn website, which offers good fares for train travel to Germany and points east.0 -
On the boating/cruising theme, what about Sardinia? Two weeks on a catamaran would be well within your budget. You can dictate they way the cruise goes and if you prefer, trips inland can be arranged in the boat owners air conditioned Merc. It's all included in the price of the holiday.
