Flavouring chicken

Hi

Been buying some trays of chicken pieces flavoured with lime, corriander and chilli and some tomatoe and onion flavoured. I had realised they were a little pricey at £2 for a small tray but I had a light bulb moment that I was only paying £4 for a large chicken that did the family 3-4 meals!

Does anyone know of any quick, easy and cheap coatings/dressings to make my cheap chicken posh?

    I cut an unpeeled lemon into 4 and insert into chicken cavity before roasting.I then loosen skin over breast and push sprigs of rosemary underneath,and do this also with the legs.Roast as usual.It makes lovely juices for gravy:D

    1. Try an orange. For "Thai Roast Chicken", use a lime.

    2. Do what Marco Pierre White does on the Knorr television advert. Mix a chicken stock cube and a little olive oil into a paste. Spread this over the chicken. The advert shows chicken breasts. A large whole chicken might take 2 cubes.
    The acquisition of wealth is no longer the driving force in my life. :)

    Cut slits in the chicken & insert a sliver of garlic & a sprig of thyme into the slit,or make a rub from 1/4 pack of butter,some chopped herbs & chili flakes.Rub this over the chicken flesh & baste when cooking,Or melt the butter mix & inject into the chicken meat or gently seperate the skin from the meat & insert the butter mix

    PS,That butter mix also works well with fish,like Salmon cooked en papiotte (in a bag)

    I have a tin of Cajun seasoning and that, sprinkled over chicken or pork is fabulous, for next to no effort! Can't remember the name of the manufacturer, but I bought it in Tesco, it's a silver/orange round tin, stocked on the herb & spice aisle

    Mix some fresh chopped tarragon into some olive oil & coat the chicken. It's yummy.

    Depending on your £££s....

    Dried mixed herbs & a little oil - brush chicken with oil & sprinkle generously with herbs. Also chuck a good teaspoon full inside.

    Mix fresh ground black pepper, sea salt & fresh or dried chopped sage in pestle & mortar - sprinkle generously over chicken & chuck rest inside with knob of butter & half an onion (use rest to make stuffing to cook separately).

    Grind chilli flakes, peppercorns & sea salt in pestle & mortar - add little oil & daub over chicken like war paint.

    With all of these, the flavours will come out in time, so if you can adorn your chicken & leave it to marinade before cooking for as long as you can (even overnight) you'll get deeper flavours.

    thyme, butter and lots of salt
    garlic and lemon in olive oil
    sesame oil, soy, ginger
    lime and chilli
    honey and mustard
    worcestershire sauce, mustard a little sugar and ketchup for a bbq flavour
    tarragon and little white wine
    pesto
    sundried toms mushed with basil

    If you like reggae reggae brush some over the skin before roasting yum yum, I also like a bovril cube sprinkled over instead of chicken cubes:D
