Polenta makes a good "crumb" on all sorts of things like fish, chicken, in fact anywhere you would use use breadcrumbs to coat. I do a KFC style chicken and use polenta to coat the chicken pieces, gives a much crunchier texture.
I've got quite a bit of polenta to use up which I bought some time ago as it was suspected that my DGS was coeliac but it turns out he's just a bit wheat intolerant and Dr has now advised that he has wheat gradually reintroduced into his diet and hopefully now he's a bit older he will begin to tolerate it.
Seems daft to me - he's either wheat intolerant or he isn't:question:

Denise - I guess we may tolerate things more as an adult? Though more and more people seem to be intolerant these days.. there has been quite a bit on wheat and whether the modern farming, varieties and processing methods make it harder to digest. I struggled with milk as a child, I can keep dairy down as an adult, I don't throw it up so much lol although I'd never drink it 'neat' to test that out.
I don't eat meat etc, think that would make an easier crumb coating but will give it a go on the cheese peppers. Though seems an extra bit of faffing admittedly!
JB - ah Moroccan semolina bread - may chuck some in my next loaf. I'm only doing pitta today, don't think I will risk it in them..
I couldn't eat polenta soft, it looked gross! and yep that in the tray is what I tried, with cheese and herbs/garlic - I've just cut the tray up and frozen it, got LOADS of them in the freezer now.. I'd rather have potato though!! Don't think I'd make them again.0 -
I think polenta is corn based whereas semolina is wheat based??
Though what is cornflour, a finer grind of polenta??
Polenta = cornmeal, ie finely ground corn (or maize, in the U.S.)
Semolina = finely ground durum wheat

Kirri maybe you could make cornbread with the polenta? Or to go with the chips a Veggie chilli with guac and sour cream?
This thread has suddenly got busy!
I made the turkey and asparagus risotto and added corn and.pas, it has lasted 3 days last portion today, I did use a chicken stock, turkey pieces, corn and peas all from the freezer.
Off to Zumba today, so dinner will be later, I'm going to swap breakfast and lunch around, so I don't feel so heavy at Zumba, I always have lunch late, so going to have a smoothie. Nothing in or out freezer today.Lose 28lb 3/28lb

Never tried making cornbread, had it in America and loved it though! Also the veg chilli would work well - or wonder how I'd make a corn tortilla??
Just got the dough for the pitta on the go - added in some allotment saved coriander seeds, crushed and some black onion seeds (I think they are) into the dough, maybe more of a middle Eastern flatbread than pitta.. was going to add oil and zatar on the top but may be a bit much now I've put seeds in the dough.0 -

Just had my soup for lunch - it was okay but a bit thin, so I stirred in a couple of tablespoons of Sainsburys basics instant mash flakes and it thickened it up nicely. There is enough left for about three more (big) bowls. Had an Activia snackpot rhubarb yoghurt for afters - DD1 went on a diet (:rotfl::rotfl:) and insisted I got every flavour of these and now guess who's eating their way through them all? Actually they are really nice.
Going to go on the voucher thread now and have a look for some vouchers to print off. I would also like to know what the gmail glitch is please!Jane

Dinner eaten already - very impressed with the black onion seed and coriander seed flatbreads/pitta, once the dough is shaped and proved they only take 3 mins to cook. Defrosted a portion of the lentil dahl I made the other week to have with them. Very cheap dinner.
Am beginning to get tired of the amount of cooking I'm having to do though to cook absolutely everything from scratch - got a craving for an easy Quorn dinner lol.0 -
