    X2 waitrose scotch pancakes, a dollop of Greek yogurt topped with the homemade Christmas granola.

    I think I'm going to read up on making granola, it sure is yummy.

  • Don't think there will be any freezer movements today apart from icecream. Living off leftovers from the fridge.
    Have a very busy day today, Physio, xrays, doppler scan, consultant all to see how both my my hips and DVT are progressing. I also need to go to MrS as I need pate for tomorrows lunch - friend coming.
  • Grilled Figs
    recipe from 'Reader's Digest Vegetarian Cookery Bible'

    A gorgeous dessert featuring plump fresh figs, scented with rosewater and oozing with beautiful pink juices.

    Total Time 20 mins
    Serves 4
    Nutrients per Serving: 266 calories, 38g sugar, 12.5g fat

    15g butter at room temperature
    8 large fresh figs
    1 lemon
    few drops of rosewater (optional)
    6 tablespoons caster sugar
    6 tablespoons creme fraiche

    1. Preheat the grill to its highest setting for 10 mins. Lightly butter a small, flameproof dish.
    2. Rinse, dry and remove the stalks from the figs, then cut them in half.
    3. Squeeze the lemon juice into a small bowl and add the rosewater (if using). Toss the figs in the scented juice, then arrange them cut side down in one layer in the buttered dish. Sprinkle the skins liberally with 3 tablespoons of the sugar.
    4. Place under the hot grill and cook for 3-4 minutes. Turn them over, sprinkle the cut sides with the remaining sugar and grill them for a further 2-3 minutes. Serve piping hot, bathed in their pink juices, with the creme fraiche.

    Maple-Baked Oats with Figs

    "Ideally, brunch suggests lazy mornings spent lazing in pyjamas with lazy food that doesn't require too much tending. Here, you'll find a cross between a warming porridge and a flapjack, with beautiful figs and delicate tart apple running through the oats. Common to most brunches, syrup is an absolute must! A brunch without maple is like a Mountie without his hat."

    Prep Time 10 mins
    Cook Time 35-40 mins
    Serves 6

    500ml semi-skimmed milk
    2 medium free-range eggs
    30g unsalted butter, melted
    75ml maple syrup
    4 tablespoons dark brown soft sugar
    1 large cooking apple, peeled, cored and cut into 1cm cubes
    4 -5 ripe figs, each cut into 8
    200g rolled oats
    1 heaped teaspoon baking powder
    1 teaspoon ground allspice
    A pinch of salt
    50g flaked almonds
    Yogurt, to serve

    1. Preheat the oven to 180C/gas mark 4. Grease the bottom of a 1-litre dish.
    2. In a small bowl or jug, gently whisk the milk, eggs, melted butter, maple syrup and half the sugar.
    3. Tumble the chunks of apple and half the figs into your dish with the oats, baking powder, allspice and salt. Give everything a good jumble around using your hands or a large spoon. Gently pour over the milk mixture and allow it to soak in for a few minutes.
    4. Sprinkle the remaining figs, the flaked almonds and the remaining sugar onto the mixture, then bake in the oven for 35-40 minutes until the milk has become fully absorbed. Serve while still warm with yogurt for a delicious brunch dish.

    Maple syrup.. reminds me of living in Canada and pancakes on a Saturday morning but they're more like those Scottish griddle cakes than the pancakes we are used to.

    Kirri.. shame, looks great cheese but after waiting in all day for the Farmaround order etc I'd never use them :(

    ^ yep, I'm lucky all my orders have turned up ok. Although I've bought it for animal welfare reasons it is one of the best tasting organic cheddars I've had (luckily!) and has a fairly good bb date usually. They are hoping to expand the range too. The dairy who make it for them have their own website (will try and find it and stick in the org thread).

    I've saved a few recipes for granola, looks fairly simple.. if you manage to get the recipe from the person who made it for you do post up please :)

    In to freezer - nothing.
    Out of freezer - HM quiche + smoked mackerel.
    Not posted photos for a few days - hectic here with the house renovations.
    I am still losing weight - had ultrasound - normal.
    This was a dinner that I did photograph - roast potatoes/parsnip + HM chicken pie + roasted beetroot, red onion, red pepper, tomato.

    Luckily for me the tree in garden still ripening some - another eleven today :)

    That's a bargain price compared to Tesco/Sainsbury's.
    OH says try them halved and eaten with prosciutto.
