    Today I have taken some liver out of the freezer to use it up and a single chicken breast for ds who doesn't like liver!! At least the stocks are going down. Nothing added!!
    I'm not a failure if I don't make it, I'm a success because I :tried!

    In to freezer - nothing.
    Out of freezer - plain flour + butter.
    For dinner we had roast potatoes plus we think it was pork - FF + HM Yorkshire Pudding + roasted veggies - beetroot, red onion, white onion, green pepper, tomato + gravy for dinner.

    Change of dinner - pasta with blue cheese and french beans - easy meal, all done in one pan in 10 mins.

    Planning very roughly meals for the next month which don't really involve any spends.

    Rest of the week will involve the blue cheese or the pesto, as both need to be used.

    Today we have had belly pork out of the freezer and also used up some veg that was in.
    Also used up some more soup over the weekend and last of the peas from freezer.

    May make a quiche tomorrow to use some eggs and also have some tomatoes that have been given to us. Cheese & tomato quiche perhaps.

    Dinner today is HM bolognaise from the freezer with garlic bread.

    Money is getting really tight!! I hate waiting for other people to sort things out.

    My redundancy should be paid in the next 4-6 weeks so just need to hang on...

    Today I have taken out of the freezer a pork fillet, but my son needs a pack up tomorrow so I called in m&s on the way home - I walk past it, and they had just reduced the breadbuns, and I also got a quiche reduced so the remaining breadbuns and the quiche are going into my freezer. Oops!
    I'm not a failure if I don't make it, I'm a success because I :tried!
  • Done a little shop in waitrose today, I got beef steaks x 8 6 mini burgers, pork loin slices, 22 packets of popcorn, a cupcake and 2 handwashes for £10.

    Had some Greek yogurt for breakfast, just opened a huge tub bought from Costco, also made a mango and apricot puree and had had it with blueberries from the freezer, lunch was a pork loin, cheese and lettuce wrap, dinner was at my grandmas house.

    I walked there and back 2.3 miles each way :-)

    OUT of the freezer today - some bacon bits that went in a quiche. Actually made two so IN to the freezer will be a quiche.
    Also made a loaf while the oven was on.

    Slightly over cooked if am honest but taste fine.

    Oh just remembered two frozen yogurt ice lollies out of freezer as well. :) Grand children came for an hour.

    Courgette Soup
    (from the Morrisons magazine, for anyone with a courgette surplus:))

    Serves 4
    Heat 30ml olive oil and 15g butter in a pan.
    Add 1 onion, peeled and chopped, and 900g courgettes.
    Sprinkle over 1tsp dried oregano and cook for 2 mins.
    Season, then pour in 600ml veg stock.
    Bring to the boil, half-cover the pan and simmer for 30 mins.
    Add 150g diced dolcelatte cheese and stir until melted.
    Blend the soup until smooth.
    Stir in 200ml single cream and heat through gently without boiling.
    Ladle the soup into warmed bowls, and divide 100ml single cream between them, swirling it on top of the soup. Garnish with a little crumbled dolcelatte and freshly ground black pepper.

    In to freezer - nothing.
    Out of freezer - chicken drumstick, HM egg/bacon pie, butter, HM crumble, slice of HM Victoria Sandwich cake, 2 HM carrot cake muffins.
    For dinner we had HM Salmon Quiche with HM wedges + salad - grated carrot, red onion, white onion, cucumber, celery, pepper, tomato dressed with red wine vinegar.
