Confused!! Data? Mobile Internet? Mobile browsing? Whats the difference

Hi all,
I'm looking to take my first step towards joining the smartphone generation and retiring my trusty Nokia, but I'm stuck slightly in which contract will be best?
I've been looking at offers on the various networks and places like carphone warehouse but there is one thing I cant get my head around!!
Some places mention "data" being part of the plan, some mention "unlimited internet" some even say "mobile browsing!" What is the difference between these? If I buy "data" what does that cover? or if I buy a plan with "mobile browsing" does that mean I can't get these apps?
The other thing I cant decide is which smartphone, although I did like the HTC Desire S when I had a go of a friends (main reason Im looking to upgrade
).

I think the apps for most part are payed for as and when you want them from maybe £0.49 up to £5.00, some are free,
Also you need to tell them what you will use it for ie: constantly looking at videos on youtube and the likes may be better off on the unlimited internet plan, it depends on what you do plan to use it for. just tell them when you go back in and purchase.
Do rember though if you get one of these beware about using in certain places abroad as some costs can be vey excessive0 -

Data is best thought of as data that the phone downloads web pages maps etc over the internet .
But with a phone you usually have WifI connection to your home router or outside free sources . Data then is free .
But standard data on many Smartphones is via your mobile network and is either charged per use or part of a package with varying amounts per month .

As been said not actually unlimited and that refers to data downloaded via the network as above .
