Hi, Loopy lass - I always start my turkey off upside down. It definitely helps it stay moist. The only problem I have with it is turning it back over when it is so hot - it involves 2 people, lots of oven gloves and a roasting fork... and a few expletives... but it is worth it.Weight loss - here we go again - watch this space!
