Non delivery of items with order - my rights?

I ordered a selection of fruit trees and bushes from a specialist supplier. I was told there would be two deliveries - Oct/Nov and Nov/Dec.
At the end of Nov a parcel arrives containing all but two of the bushes - there is no delivery note enclosed so we assumed that the remainder of the order would be on its way separately.
I then went into labour and spent a week in hospital so today thought I would just ring and check where the rest of the order was.
Customer services couldn't help straight away but rang back later and left a message saying that they had checked their order and everything had been ticked off (ie sent) and that as we didn't let them know within 3 days (that is their policy) there was a problem there is nothing they will do (!)
There is nothing on their website saying this apart from a 7 day returns if not saisfied policy and as we didn't know that the order was complete (no documentation) we wouldn't know to ring them up!
Basically, the woman seemed to be saying that we were lying (over a couple of fruit bushes!)
can anyone offer any advice ?

did you sign anything accepting the original delivery?...was there a delivery "advice" note with the courier, did you sign anything stating 1,2 or 3 parcels or items in a consignment?
If not dispute it via your credit card company, I would have thought the onus was on the seller to prove they delivered what you ordered, in the absence of any signed acceptance note I would think they have no proof of what was delivered, if anything....they may claim to have sent it all....but have they any proof you received it all....without you actually acknowledging in writing you took delivery....how do they know if you got it all, some or none?I'm now a retired teacher... hooray ...:j
