Help With Meals

hello all,
not sure if this is the right board to post this on here, I want to start cooking to good meals, at the moment we live on chips, chicken nuggets, dippers all that kind of food, my daughter is a very fussy eater which is hard, and she is only 4 1/2 year old.
I have tons of rice in cupboard...boil in the bag, any suggestions what i can do with that, she loves rice.
Also, suggestions on what i can do with mince, she will eat mince.
oh an another thing what can i do with a childs pack lunch for school, she is getting fed up of sandwiches

My girls love nuggets but I make HM ones and they are so easy (and tasty). I get a tray of chicken breast from butcher on market £5. This makes 2 huge freezer bags full of chunky nuggets. For the coating I whizz HM bread in the foodprocessor (white of wholemeal works) add garlic powder and paprika. Take the chicken chunk roll in mix of egg and milk, roll in breadcrumbs place on greased baking tray. When tray full open freeze for about 20 mins then transfer to freezer bag (stops them sticking together). I defrost mine before cooking only take about hour (if that) and cook at 180 for 10 mins. No Salt, No added Nasties just solid chicken breast! DH is addicted to them.
Same with burgers, make my own but instead of breadcrumbs or egg I grate an apple in and this help combine them. So mince, apple, chicken oxo cube dissolved in 2 tsp hot water, 1/2 tsp worchester sauce, pinch brown sugar, tbsp parsley. Sweeze it all together through your fingers in a mixing bowl and make into whatever size burgers you like. I then put these between 2 bits of greaseproof paper and open freeze then when set I stick them all in a bag in the freezer.
Rice - my girls love Egg Fried Rice with Chicken nuggets and curry sauce. Do you do EFR? You could dress it up and add other things such a sweetcorn, peas, chopped up meat leftovers.
Another tip for mince and to increase the amount of veggies eaten is to sautee off onion, carrot, leek (have even done swede and parsnip before) and then whizz it in the food processor with tin of chopped toms add to mince that has been browned of and instant bolognaise sauce (I like to add garlic and basil too). We have this with pasta or use when making lasagna. I always have kiddy size portions in the freezer for emergency teas as it takes mins to defrost in the microwave and only about 10 mins for the spaghetti.

I made a really quick meal for my little one yesterday with some leftover rice. I whisked two eggs and poured them on top of the cooked rice. Put it in the microwave for 2 minutes till the egg had set and cooked and then mixed it in with the rice. Then I added some peas and some ham and she loved it.
Quick and easy lunch for a fussy eater. She ate every bit.

My recipe is really basic but even DH likes it (fussy bloke!!)
I cook the rice off and let it cool.
Depending on quantity of rice (say a boil in bag that feeds 2) I would beat 2 eggs up add clove of garlic and mix. I heat some oil in the wok and add some olive oil (about 1 tsp) - sesame oil is better if you can get it as really adds to the flavour. Once oil is heated add egg mixture and mix like you were making scrambled egg, once cooked add rice and splash on soy sauce. Ensure you heat it through properly.
You can add spring onions etc but find these a waste of money my self (plus DD1 not big on onions).

Hi in -trouble. Just wanted to say, don't deel overwhelmed and think that you have to change everything at once - have a look through the recipe index and find something thing that you think that the family will like and that is manageable. Then find a time when you have plenty of oppertunity to make the meal - you will soon build up a repertoire of meals that you can cook from scratch easily. Don't forget the option of freezing as well.

If she likes mince then do not forget that turkey mince is cheaper and lower in fat.
If you brown the mince in a pan with finely chopped onion and grated carrot, a can of chopped tomatoes and a little garlic if they will eat it - then add to the top of boiled rice - you have a non spicy chillie - you could add kidney beans if they will eat them .
The same method makes a nice spag bol.
How about home made spicy potato wedges - parboil potatoes in skins then cutinto wedges - sprinkle with herbs or spices - put on oiled baking tray and bake in hot oven for 45 mins."This site is addictive!"

Our (now 6 year old) son has always been a fussy eater, and when he started school he brought packed lunches. Then my DH lost his job and we were entitled to free school meals, and all of a sudden he started eating lots of different food, stuff he wouldn't normally touch at home. And now he will eat just about everything! But then he's still at the stage where sticker-rewards impress him... It was a real fight at the start, to get thim to eat his school dinners, as we continued with these after DH found new job and were no longer entitled to the free meals. But at £1.45 per day I didn't really think it was that bad. And now he eats his dinner every day! YAY!
It depends on how old your daughter is, but if she's still in primary school, they should be able to help with the fussiest of eaters if you just ask.0
