probably should have given one of the bags back to the diver but nevermind. Paid 14p for 11 bananas so cant complain there! Made banana cake yesterday - will prob do some more cooking this afternoon and will try freezing
EDIT - have to add I am a very fussy banana eater - as soon as they start going ripe I dont like them... prefer them when they are still a bit green and still hard. These are all already 'past it' I'm afraid!Henry Pootle (aka Piglet)

make a carrot cake (recipe will need two bananas) and it will get something apart from just bananas in your system
also lasts for about a week in a tin

Oat & fruit cookies
2 ripe bananas (8oz when mashed)
2 egg whites lightly beaten
5oz dates (pitted and chopped)
4.5oz oats
3 oz raisins
1) roughly mash bananas leaving some chunks
2) add egg whites and dates and mix thoroughly
3) stir in oats and raisins
4) set aside for 10 mins
5) place teaspoons of dough on lightly greased baking sheets and flatten with spoon
6) bake in preheated oven 180 c, 350f for 20-25 until edges slightly browned
7) leave to cool
can store in fridge for up to 4 days in airtight container or freezer for 6 months
Sound nice and perfect on a low fat diet, I hate dates though could I change for figs?AKA: PC

I just read this banana thread for the first time and thought I would share my baked banana recipe. Wrap whole in foil, skin on and place on hot BBQ coals for 10/15 minutes. Remove, open foil and slit and open banana lengthways Eat hot from skin with cold dairy/squirty cream. I expect an oven would give the same result.

I've got a great banana bread recipe - my husband loves it, we use it when the bananas go brown :
ngredients:
2/3 v ripe bananas
1 tsp lemon juice
4oz/100g Butter or Margarine
4oz/100g caster sugar
2 eggs, beaten
80z/225g self-raising flour
1. mash bananas and lemon juice together in a bowl
2. in a seperate bowl - cream the butter and sugar, beat in the eggs, - then add the bananas - mix well
3. Sift flour into the mixture, and mix well
4. Turn into a greased 15x20cm (*i use a bread tin), cake tin, and bake in a moderately hot oven for 40-45mins
200c / Gas Mark 6
5. cool on a wire rack before slicing0
