So many bananas...

I used to make banana smoothies when I was little, one banana per person, blitz up in the blender with some milk and a tsp of sugar then drink
Otherwise you could try making lollies?
Blend together in a smoothie maker or blender bananas, honey or melted down sugar and some vanilla essence (tiny amount!) and cream or milk then freeze, would probably set better in an ice cream maker but not bad like this.
You can also peel them and freeze them for later use cooking but without the skins as the skins will go black in the freezer, no damage to the fruit inside but just a waste of freezer space if you do freeze them.
My dad also used to use up almost-dead bananas by mashing them with milk, warming them in the microwave for a minute or two with a few raisins or other dried fruit and then adding a little single cream and granulated sugar to taste. Not such a great diet food though!!0 -
I would have given them back to the driver. No point in paying for something you don't want.
When I buy bananas from Tesco I add a shopper note- 4 single unmarked bananas, this is what i get- 4 unblemished bananas, that note stays on all my orders for the shoppers reference. You live..You learn.:)0 -
Banana Curd
Keeps for 6 weeks in the fridge
4 large bananas (ripe , but not spoiled)
125 g butter
340 g caster sugar
1 lemon (using the juice and grated rind)
4 eggs
1. Mash the bananas, Melt the butter in the microwave, then add the sugar, bananas, lemon rind and juice. Cook for 10 minutes.I do this in few minute bursts and give it a good whisk.
2. Beat the eggs very well, add to banana mix and whisk quickly and very well so that it doesnt curdle.
3. Put back in microwave in 3 minute bursts maybe about 3 or 4 times till thickened, remember it will thicken when cooled so as long as it coats the back of a spoon its ok.
4. Pour into hot sterilized jars and seal.

Thanks for the recipe!
I make lemon curd all the time because it uses up eggs (I have hens and the number of eggs gets daft sometimes).
Never thought about using any other fruit though!"carpe that diem"0 -

Banana muffins (add nuts or chopped chocolate or sultanas too) - bake then freeze and use as needed
Mashed banana, orange juice and a raw egg yolk mixed together is THE most sublime nutricious drink - trust me.DTD - Doing Tesco Daily - while I still have vouchers!0 -
Wrap the spares in bubble wrap thickly and put in fridge. Skins will gradually go black but flesh remains firm for well over a week. HTH.0

Now the weather's a bit cooler I have been driven back to experimenting in my kitchen...have been trying to work out a way of making moist flapjacks whilst cutting down the amount of syrup. My eureka moment came this afternoon - substituting mashed ripe bananas has got me the result I wanted!
The flapjacks are even more delicious than usual and my efforts have earned my Mum's total seal of approval (she's a very tough customer but I actually think I am going to have to hide the cake tin from her on this occasion!).Value-for-money-for-me-puhleeze!

I made banoffee pie today...looking forward to eating it tomorrow!
I always just freeze extra bananas in their skins. When you defrost them later they go a bit mushy and are perfect for making banana bread or cakes.VfM4meplse wrote: »Now the weather's a bit cooler I have been driven back to experimenting in my kitchen...have been trying to work out a way of making moist flapjacks whilst cutting down the amount of syrup.
Another alternative for the flapjacks is to substitute in apple sauce...very yummy!Common sense?...There's nothing common about sense!0 -
