    I remove my card details from amazon as soon as payment has gone through
    When I want to make another purchase I put them back in.

    Within the users's control panel there is a facility to add/modify/remove stored payments methods.

    Others do the same within paypal so they have stated on this site.

    This is normal behaviour for some email clients (e.g. Thunderbird does it and IIRC so does Outlook) if the email was sent To: the address that you can see, and Bcc: to your email address (and possibly many others, which you also won't see).

    If that's true and you look at the complete email headers, you will see your email address in the Envelope-to: field but not in the To: field.
