Monday 25th – Pesto Pasta (Half Portion w/ Cod)

Wednesday 27th – Pesto Pasta (Cheese and Onion Pizza) :dance:
Thursday 28th – HM Chicken Kebab 'The Takeaway Secret'

    Thursday - Marinaded aubergine salad, garlic bread
    Friday - Turkey, bacon and mushroom casserole (from freezer), mash, greens, carrots.
    Saturday - Spiced lamb rissoles, rice, tomato sauce.
    Sunday - Smoked salmon tart, spuds, greens, carrots.
    Monday - Baked spuds, baked beans, cheese, salad.

    I've been Money Tipped!
    Tonight: crudite and humus then cheese souflee, then icecream.

    Tomorrow night...Nut roast, roast potato, whatever veg is on offer later today
    Saturday(lunch left over nutroast) supper: some sort of vegetble risotto I think
    Sunday: Roast lamb, new pots, peas, Eton Mess.
    Monday (Eating out)
    Tuesday: Salmon, black or red rice, tomato salad. Might make a summer pudding if DH behaves well ;)

    Not sure if tonights planned dinner will go ahead-I reckon I'll get stuck at work late, so although have planned an easy pasta dinner-it may end up being a takeaway-oops!
    Here's the plan for next week!
    Su 24 roast lamb & trimmings
    Mo 25 lamb, pea and mint risotto
    Tu 26th retro curry and rice
    We 27 out
    Th 28 crispy skinned mackerel with Asian dressing, rice and chinese greens
    Fr 29 sausages, onion gravy green veg and mash or new potatoes
    Sa 30th spaghetti bolognase
    Su 1 gammon, mash and veg, or roasties and veg

    For me this week:

    Friday - salami, portobello mushroom and pesto pizza
    Saturday - summer chilli (with lots of veg) with a jacket potato
    [STRIKE]Sunday - pasta with bacon, squash and pesto[/STRIKE] Ran out of time so just a sandwich
    Monday - quiche lorraine and salad (the first time I've tried making quiche in ages - I'm determined to get the hang of working with pastry! :o)

    Tuesday to Thursday -
    [STRIKE]HM fish goujons inna bun with mushy peas and grilled tomatoes
    spicy smoked mackerel rice

    beanburger puffs and salad (these have been on my mealplan several times now and have yet to get made - I will make them this time! ;))[/STRIKE]

    My quiche worked beautifully and I ate way too much of it, so it's healthy stuff for the rest of the week now :o

    Tuesday - sweet chilli veg noodle stirfry
    Wednesday - pasta with tomato and tuna sauce
    Thursday - fish goujons with spicy potato wedges and steamed green veg
    Back after a very long break!

    Could you possible share the recipe for this? Sounds yummy!

  • Marinated aubergine & rocket salad

    Serves 4

    2 aubergines cut into small chunks
    3 tbsp olive oil
    2 tablespoon balsamic vinegar
    Small handful sultanas
    50g bag of rocket


    Toss the aubergine in 2 tablespoons of olive oil, season and bake at 200c for half an hour.
    When cooked mix with the vinegar, sultanas and remaining oil. Scatter over the rocket just before serving.
    Can be served warm or at room temperature

    My mealplan for the upcoming week:

    Sat: BBQ Chicken & Wedges
    Sun: Roast Pork, Roast Potatoes, Trimmings
    Mon: Nasi Goreng, or spicy fried rice with leftover roast pork
    Tues: Lasagne (from freezer, but HM)
    Weds: Stir Fry
    Thurs: Curry of some description, not sure which yet.
    Fri: Homemade Pizza
    Sat: Shepherd's Pie.

    I must work on getting my mealplan a bit more summerified. That will be my next job, I think. I'm kinda looking forward to salad season. Thanks for posting.

    sun - butterfly leg of 'persian' lamb, chicken souvlaki, wraps, humous, tzaziki, greek salad, griddled courgettes with pinenuts and jewelled rice salad for bbq lunch with IL
    mon - hm veggie burgers, wedges and salad
    tues - hung shao pork and ricewith stir fry veg
    weds - hm pizza
    Thurs to Sun - camping
