i have done it and it was really lovely and worked out so cheap i used pork loin and got a smoked mix from a company called sausage making sorry dont know how to post links.I also made my own xmas ham a mix from the same company.You will need a meat slicer though.:D0

I've made pancetta, and it's lovely :T When we get our pig back from the butcher, we're planning to wet cure a leg.
I'll add this to the existing thread on making bacon so that you can see what others have done

What an interesting thread!
I had no idea you could make your bacon out of a peice of belly pork and with such simple 'rubs' if you don't use the saltpeter..
Next time we visit the butchers I think we will get an extra peice of belly pork and try it. We do not really have anywhere warm and dry to hang it but hearing that it can all be done in the fridge was really inspiring.
