We had a go, and it was simple (well I can say that as DH did it!) We'd bought half a pig and so were trying different things, but I guess it must have been cheaper as bacon is expensive (I don't eat non-free range pork). We must have another go at it soon, I think its one of those things that you get better at over time by experimenting with different flavourings etc.
We also made ham in apple juice brine (recipe from the meat book also) but I wasn't so convinced by the OS potential as the ingredients were quite expensive. I do want another go though.:shhh: There's somewhere you can go and get books to read... for free!

Sounds interesting.
Dh loves bacon, but won't have the "plastic" type, so currently paying £1.99 for six rashers of the Walls "no white stuff" which is all he will eat.

(They cure meat as well as make sausages)
They also have an online shop http://www.sausagemaking.org/ where you can buy the saltpetre, etc that can be difficult to get. they also do mixes where the salt/sugar/saltpetre are already mixed for you.
I've bought from them before.
