Having removed the outer kind of skin thingy, they can actually be eaten raw, as a salad constituent, but normally you just chop it up and boil it like any other veg, turnip, etc. Also makes a nice stew, with ham, or just about anything thrown in, like you would with stews. So, no mystery, it's really just another turnip type veg, but really a rather nice one. Nob of butter melted over is quite nice too. Just wish I knew where to get it here. Odd that it is so common, and popular, in Germany, but almost unheard of here.0
