i always used to peel carrots until i was watching jamie oliver on tv the other day and he was cooking with carrots and said theres nothing wrong with the skins on these carrots and didnt peel them! so now i dont bother either
just give them a quick wash

Completely agree. I grew up with mash from peeled potatoes but now have seen the light.
The skins of sweet and white poatatoes and the best bit.

I don't peel carrots. I don't chop them either. I just whizz them under the tap and cook them whole. If I am doing soup I just chop them about a bit once they are cooked so the blender can get at them. If they are going on the plate, I think they look quite nice whole anywayI'm a retired employment solicitor. I think carrots are supposed to be one of the veg which pick up nasties from the soil more easily than some others do (pesticides and other things I mean). For this reason and this alone I always peel mine unless I know they're organic and so much less likely to have picked up stuff. I don't peel most veg though because it's a bit of a waste isn't it.0
