    does trex freeze ok? Going shopping in a bit but can't get around to mince pie making for a bit

    No need to freeze Trex - the use by date on the one I bought is Sept 2011. The pastry freezes well though - I always freeze about 2 dozen of the 3 dozen pies I make in a batch.

    What mincemeat do you recommend. I always used to use the old fashioned Robinsons - but the one I looked at yesterday looked horrid - very runny. I've no time to make any - suggestions?????

    Hi all,

    My first batch of the year is in the oven now :) 2 dozen, and a load of pastry left over. I halved the recipe and it was still loads! (I say that every time I make it lol, you'd think I'd learn!) As last year I used half butter half lard, for flavour.

    I made Delia's mincemeat, and TBH it doesn't take long. Its just chopping a Bramley and weighing out fruit. It needs a low oven for 3hours, but I was pottering in the kitchen anyway so it was no hardship.

    We've used up some Robertson's for a taste comparison. Next to the Delia stuff it looks anaemic and fatty.

    Brilliant pastry,I think I'll start using it for other sweet pastry dishes.

  • I made mince pies with the pastry recipe for the first time.

    It was sooo easy to do and they taste delicious. The only thing I would say is it tastes more like shortbread biscuits than pastry.

    Still an excellent recipe though.
  • I used this pastry recipe last year and the mince pies were awesome. Getting ready to do it again this year. Also I added cranberry sauce to the mincemeat and it tasted amazing, so that's another thing I will be doing this year.

  • Have already started this year - made a batch and used it to make a couple of huge mincemeat plate pies. Tried Delia's mincemeat recipe for the first time and it went down so well that I will have to make more - used a whole jar for each of the pies I made!!
    Can't recommend this recipe highly enough, although I have tweaked it a little to make enough for 5 dozen little mince pies. You can never have enough!

    Just gone to search this recipe out as it is my favourite pastry recipe and it has already had loads of use this year! Here's me thinking I was on the ball!

    Just agreed (stupidly) to make all the mince pies for our christmas party at playgroup. So that will be 50 I need to make!

  • Just bumping coz i plan to bake tomorrow n this sounds great ! read the whole thread with tears in my eyes at the wonderful neighbours troubles. OP ( researcher ?) i noticed someone ask for your neighbours name so we can all name her in our tributes and offer thanks as we NOMNOM the pies did u ask ? did i miss the post ? any way until the MSE mince pies are up there with Twinks hobnobs and the MSE flapjacks i have found on this site ...

    I made a batch on Friday, i used half Trex half unsalted butter as i like a buttery pastry.
    It made 32 pies some were full tops and some i did a loveheart or 2 on top for the girly touch lol.

    They are the best pastry ever lovely and crumbly,rolls well,handles well etc.....

    Have frozen about 15 for my mum as i know she will appreciate them :)

    Thanks you for the recipe i am going to write it down with my others so i don't loose it.

    Only thing i need to ask is: i made mine friday some of them i put some brandy in for an extra kick but how long will they last before they go off....it is only me that eats them and i prob have 15 left to get through so might take me over a week depending on cups of tea and mince pie mood lol.
