Sky cards are paired to a box for any premium channels you subscribe to, ie movies sport etc. you are right the sky plus feature would not work, if you have no card in the box you can still watch Free to veiw channels. With a card, regardless or whether it is paired you get free to air and free to view channels,
So simply put if the card is not paired with the box it wont matter what you subscribe to you will only get the same channels as a freeview box.

You wont get the movies & the sports but you will get the basic subscription channels (Sky1/Discovery ect) as my Aunts Sky+ (Thompson) went wonky a few weeks ago,I replaced it with my old Sky+ box & she got the Sky1 ect,but no movies & the record/play didn't work until I'd paired the card to the new box.It's alway's been that way ever since I worked for them.
As she will be away from home she can take the Sky box from her home and use it. You don't need it to be connected to a phone line unless you want to do interactive things.
Back to original questions, yes the Sky+ box will work OK without a card and get the free channels. If you want the record, pause etc. to work you must subscribe to Sky, cheapest is £10 which gives the free channels and enables the record, pause features.
Might be an idea to get a cheap sat finder to help with setting the dish up.
