Amending flights and car hire dates

Hi all,
This seems as good a place to ask as any - probably better than getting a massive phone bill phoning a call centre...
I am off to Italy next week for work. Booked flights + car hire for two people with Easyjet well in advance - now it seems that we don't need to be there as early as originally envisaged, and want to leave a day later. It's a toss up between getting charged for amending flights, versus an extra days hotel room, food, car hire, paying my colleague who is a freelancer etc.
It looks easy enough, and a reasonable price to amend the flights, but apparently I need to completely cancel the car hire and rebook it. I can't for the life of me work out how to do this, and all of the Easyjet help pages seem to refer to an old version of the website.
Can anyone help, and does anyone have any experience of the car hire cancellation rates?
