It does sound like you hit upon a great meal. Glad it went well. My MIL is sometimes over for a meal, and I get nervous about cooking for her as well. No idea why though - she is a lovely woman, would never ever criticise, and we've had days where she's been here over lunch and she's been quite happy to have beans and toast.
