HELP! What to do with . . . .

250g Mascarpone
250g Philadelphia
200g Parmesan
and a dozen eggs!
Well basically - as title says. What the flipping heck could we do with these before they go out of date? We did initially buy the mascarpone and parmesan for a recipe but OH cant remember what to do with it!
We're strapped for cash so im not wasting food. Have a reasonable store cupboard.
SO
Tomorrow's dinner must include all of the above. (Starter and main or Main and dessert)
Any ideas? xx

Any of these ingredients will freeze until you really want to use them.0 -
I would suggest something along the lines of a pasta carbonara. Only need to add pasta and ham to some philly or use the eggs to make a proper carbonara.

What about three cheese omelette, quiche or pasta sauce? Use the eggs for custard or to make a pancake or yorkshire pudding batter (cooked yorkies freeze well).
Remember that it wasn't so long ago that we didn't have best before/use by dates and people had to use comon sense to decide whether or not to eat certain foods.
Personally I often keep cheese past it's best before date and it's always been fine, so I imagine yours (providing it's been stored safely) will keep for at least a day or two more. Likewise with eggs, they rarely go off on the day they are stamped with. Do this fresh egg test to check how fresh they are.

My OH would be over the moon with this - pasta carbonara(ish) and no-bake cheesecake, his two favourites!
For the pasta:
spaghetti or linguine
diced bacon/ham/whatever takes your fancy
crushed garlic clove
finely grated parmesan
1 egg plus 2 yolks
Boil pasta and cook/crisp whatever meat you fancy in the crushed garlic in another pan (I sometimes just do it with green veg) In a bowl whisk egg/yolks and parmesan and season well. Drain pasta, (reserving a bit of the water) and pour the egg mix over quickly. Stir well until pasta is coated and then plate up and top with your meat/veg and more parmesan.
For the cheesecake:
175g caster sugar
450g soft cream cheese (your mascarpone and philadelphia)
Vanilla extract or better yet, a vanilla pod
75ml lemon juice
175g crème fraîche (optional - could also use natural yoghurt or soured cream)
400(ish)ml double cream
good handful of digestive biscuits or gingernuts
melted butter
Bash the biscuits to crumbs and mix with enough melted butter to bring together. Press in to a tin and leave to chill. Beat soft cheese and sugar. Mix crème fraîche, lemon juice and vanilla to taste. Whip cream lightly and then mix cream, lemony-vanilla crème fraîche and cheese/sugar mixture together. Pile on to base and chill.
Nothing needs to be exact with this recipe, just keep tasting as you go!0 -

OH doesnt really like anything cheesy (he had a bad incident with macaroni buut refuses to tell me what!)

Parmesan freezes really well. Chop it into smaller pieces and freeze it for another day. Eggs are freezable, but you need to separate the eggs and yolks.0

Beat marcapone and egg yolks together + 2 oz caster sugar.
Use any sponge / choco muffin/ charlotte biscuits soak in coofee or booze (amaretto/ rum/ marsala)
Line dish
Push marscapone mix on top
Chill
Then cover in cream and grated chocolate
Vanishes at any party!0
