I used it once. Seemed to make very SHORT short pastry, so I wasn't too impressed. I had planned on cooking it up in the slow cooker overnight and doing the pie this morning, but you know how these things go and the meat is still in the fridge :doh:
It's ages since I made one and I've forgotten how long I need to cook the steak for on the stove-top before transferring to a pie ... an hour, two hours?

I can give you the recipe for the filling as that's as far as I've got at the moment, but I'm going to have a go at making puff pastry this afternoon to finish it off
If you're making a pudding and steaming it for 4 hours (according to the Bero book) you don't need to pre-cook the filling as it will cook inside the pudding, but I'm going to experiment with a microwave version at some point, using the pre-cooked filling, and see how it turns out
Ok, this is what I made yesterday but you might need to adjust quantities to suit ...
2lbs braising steak, cubed
4 kidneys, chopped
about 3-4 oz seasoned flour
olive oil
4 sm/med onions, sliced
4 cloves garlic chopped
about 300ml red wine (can use ale/beer but I didn't have any)
3-4 bay leaves
thyme - heavy shake (dried, but can use fresh if you have it)
large glug or two worcestershire sauce
roughly a tablespoon tomato puree
about 300ml boiling water
salt & pepper to taste
(Normally I fry off and cook everything in same stockpot as it's oven-proof too but because of the larger quantity I made I did the frying off separately in a large frying pan and transferred everything to stockpot.)- Toss cubed steak and kidney in seasoned flour.
- Gently fry onions and garlic until translucent and put into stockpot/casserole dish.
- Add a bit more oil and brown off flour-coated steak/kidney (in batches if necessary) and add to stockpot.
- Add red wine/ale/beer to hot frying pan to de-glaze, simmer a few mins to burn off alcohol then pour into stockpot.
- Add rest of ingredients and sufficient boiling water to just cover steak.
- Place lid on and put in oven gas 4 (think that's about 180C isn't it?) and cook for 2-3 hours.
- Do taste test and adjust seasoning if necessary half way through.

My husband is a big fan of steak and kidney pie, but as I don't particularly like offal I have never made it for him in 15 years of marriage! However, whilst out shopping today in a fit of madness I bought some lambs kidneys and some braising steak, and thought I would have a go. I also have at home some frozen puff pastry, all the usual flours, suet, etc, and a reasonable range of veg.
So the question is, how do I go about it? I've had a look at the recipie index, and can only find one for steak and kidney pie in a slow cooker. I do have a slow cooker but this recipie doesn't give any timings, just says cook the beef and kidneys until they are done, and I've no idea how long that would take (though have an idea that if you cook kidneys for too long they might get a bit tough - is this right?)
Any tried and tested recipies would therefore be much appreciated, either using the slow cooker or not, I don't mind. Many thanks0 -
Hi, nicki! I use Delia's recipe. If you chop the kidney really small, you get the full flavour, but don't notice that it's kidney, IYSWIM! My children love this, but for years swore that they hated kidney :rolleyes:
I use suet pastry - really easy, but you can make dumplings, too, or a cobbler.

I make it in my slow cooker. I put it on in the morning and its ready in the afternoon. I just buy a pack of steak and kidney from Sainsbury's. Chop 1 onion, slice a load of mushrooms, add a good dollop of american or djon mustard, this is the bit that I find gives it the best flavour. 1 oxo cube and a little water.
Just chiuck it all in and leave it. I find it the quickest thing to make im my slow cooker. You can do it in the oven also. Around 160c, for about and hour.
I just put it in a dish when its done and cover it in ready made puff pastry. Bake for arounf 20 mins

Thank you both. I made it today using the slow cooker method, but adopting Delia's tip of chopping kidneys very small. Hubbie loved it, I thought it was OK (though I could still taste the kidneys), DS ate about half his portion but seemed to quit enjoy it and had had a big lunch. DD took one look and ran off leaving it completely untouched, but that's about par for the course for her with new things. Her portion is now tinfoiled up in the fridge ready for my lunch tomorrow!0

Sorry to be dim, but how much water is a little water? I'd like to try to make this, but never having done a pie before I'm not sure of the quantity. Infact how much beef and kidney too, or shall I just ask the butcher for enough for 2 pies?
