Uses for marshmallows?

120g plain flour, 140g caster sugar, 1 1/2 tspn baking powder, pinch of salt, 120ml milk, 1 egg, 1/4 tspn vanilla extract, 12 pink marshmallows, 200g mini marshmallows, glitter to decorate. Unconventional recipe to follow, but it works.
Preheat oven to 170.
Put the flour, sugar, b/powder, salt and butter in a mixer (or use hand mixer) and beat on slow speed until you get a sandy like consistency and everything is combined.
Gradually pour in half the milk and beat until the milk is just incorporated.
Whisk the egg, vanilla and remaining milk separately for a few seconds, then pour in to the flour mixture and continue beating until just incorporated.
Continue mixing for a couple of mins til you have a smooth batter. Do not over beat.
Spoon the mixture in to the cases until 2 thirds full, and bake for 20-25 mins.
Leave cakes to cool before moving to wire rack.
Put the medium marshmallows in a heatproof bowl over a pan of simmering water. Leave until melted and smooth. When the cakes are cold, hollow out a small section in the centre and fill with a dollop of melted marshmallow. Stir the mini marshmallows in to a batch of frosting until completely incorporated. Spoon on. Eat and enjoy!

Well I decided to make the cupcakes cos I'd already got all the ingredients. They are currently sitting on kitchen work top (well 11 of them are as DH "tried one to make sure they were safe to eat!") Thought the recipe was a bit of a pain but they look good. Thanks to all who posted ideas I've got a good arsenal for the future now!0
