Disagree with refund amount offered for bad holiday

We recently returned from a ski holiday whereby we were allocated one room only when we had clearly paid for two double rooms. Inghams paperwork clearly stated this but hotel paperwork was show one room for 4. We spent half the holiday in dispute with the hotel over this while Ingham were supposedly trying to find us an alternative hotel with two rooms. We could not unpack because we were waiting to find out where we were going. (we were put into two separate rooms but one couple had to move rooms four times while it was being sorted out). Eventually the hotel agreed to keep us in two separate rooms on day four (out of seven) However, we were treated with complete distain throughout the holiday by the hotel and even though drinks were meant to be included with the meal - clearly stated in brochure, they agreed only to the first drink. Not knowing quite what we would be charged for extra drinks we only had a few extras all week. We had an hours arguement with the management on the last day as Ingham had insisted that we did not have to pay for our drinks at all. This was eventually waived after Inghams phoned and sorted this out. We filled out forms and sent a letter and have been offered a refund of just £56 per couple as we weren't allocated the rooms we had booked and paid for (£900+ per person this holiday cost). W~ have received this cheque but do not agree that it is a sufficient amount. We are writing to reject the offer. Do we keep the cheque or send it back?

Don't keep the check. Send it back with the complaint clearly stating you do not accept their offer. Send it by Recorded Mail so you know they recieve it.
