I did the slow roasted lamb shanks tonight and they were DELISH! I smashed 2 cloves of garlic and chopped a handful of rosemary, smushed these into the shanks with some olive oil (a drain from the end of the tub of olives, and a glug from the bottle) and a glug of balsamic vinegar, and covered them in tin foil last night. I set the oven to turn on before we got home to cook them for 2 hours at 150 degrees. Thtey just melted off the bone. (I made some quarter sized roast spuds and roasted carrots and parsnips, that I did in the other oven at 220 for a half hour when I got in). Not bad for an after work dinner (I had the spuds and veggies prepped since last night though, so just needed to throw them on).

I really need to economise and work from stores for the next few weeks though, as my finances are a lot worse than I had thought. So almost no food for the next month and empty the freezer and cupboards instead.

Macaroni cheese with lo bacon tonight, was a really big hit with the brood, three scraped clean plates :D

Was an absolute faff to do though as I had to do a GF one and a normal one and it took ages to make. Though I have made enough that there is enough for everyone in the freezer for another day :D

It is an inner pot that you prepare your food in on the hob. Getting it to a rolling boil, and then transfer it into a sealed outer pot that retains the temperature and continues to cook without electricity. Kinda like thermos cooking but on a larger scale (or haybox cooking)!! The cooking times are similar to slow cooker times so I prefer the green alternative! Have a quick looksee on YouTube under thermal cooker. It is mindblowingly OS ethos but with a more modern, shiny exterior!

That sound amazing, right I'm off to google shortly . . .

I have ordered 2 vegetarian cookbooks because I am determined to make more vegetarian meals and need inspiration.

I can seriously recommend Yotam Ottolenghi's book Plenty, it's lovely and totally made me revise how I look at vegetarian food.

OK, £3.99 spent in co-op yesterday, lettuce, feta (not really needed) and 2 battered (dropped) tins of toms for 30p each. Off to update total and then go look at thermal cookers . . .

£3.80 spent today. I did bring some noodles in for my lunch but it was too warm for them, so I bought a sandwich (wanted a wrap, but none left :() and some frankfurters! Also, some toothpaste. I almost always bring my own lunch in so once in a while it's nice to have something different (I actually rarely have sandwiches!)

I did also get some sweets, crisps and chocolate biscuits, but they're not included. I'm going to Thorpe Park later this week (:D!) and these are for the journey.

I'll need milk when I get back as finished it off today and possibly some fruit.

Another £8 spent in Mr T today. I've been very good with lunches and have had lots of leftover type meals. Tonight was a pork with mangetout, shallots, chilli and lemon. Leftovers for lunch tomorrow.

Tomorrow dinner will be pork chops grilled with caramelized onions and cheese with mash and green beans.:D

Shame I wasn't more disciplined with eating out earlier this month!

Tigerfeet2006 - really sorry but what is lo-bacon? Is it veggie bacon?

It's Left Over, as in lo veggies, lo salmon, lo cheese :D. It took me about a week to work it out myself and I was just going to ask and it just suddenly struck me what it meant :)

Will be putting a Beef Stew in the slow cooker for dinner tonight. Need to do a loaf in the BM .

Will have to get some fruit today but that is all, the brood have eaten rather a lot over the last few days.

Well everyone I'm here to confess :o:o ............ I thought I was doing really well, but after yesterday I feel this month may fail....

    Yesterday I spent:

Mr T £40.63 general food items & an easter egg for DS (didn't use any vouchers this week I do usually online)
L!dl £20.72 Greek cheese, packet potatoes, some tins etc and a gooseberry plant :)
poundshop £16 sweets & crisps  he!nz beans on offer and a load of gardening things

and today the veggie box has come... so another £18.74 but included was a free 2 pints of milk which was good as all mine is frozen!!! :rotfl:

OMG just forgot £7.90 in Te$co express on Sunday on some bread, ham and chocolate eclaires etc

better go and add this lot to my siggy..... *slopes off feeling very embarrassed* :o
