    Ohhhh just made Coconut Balls to use up a pack that was going out of date and the bonus is............. kiddies don't like coconut so its just me and DH that need to scoff err delicately munch on them - yeah!!!


    Recipe for Coconut Balls


    180gr Sugar [I used Castor]
    2 Eggs
    250gr Desicated Coconut

    Beat the eggs and sugar together, add the Coconut and mix all together
    Shape into balls [about the size of a Golfball]
    Place onto a greased baking tray
    Cook in the oven 160.C for 10-15mins
    They are ready when they are golden brown

    I have a fan oven and used 160.C for 13mins

    MMMMMMM They sound really good :)


    I overspent this week, but its all in the aid of the Tesco Price check, in the hope i get a DTD voucher that will get me FREE shopping this week :)

    £1.23 spent in Stokes today on a pineapple and 2 oranges.

    I will be going to Lidl first thing tomorrow to get plenty of chicken. I let some of my colleagues know what offers are on, so I have the feeling the work fridge will have a lot of chicken in it tomorrow!

    Evening all

    Just a quick update of the spends, MrT today was £83 ish but had some other bits to get too, so total spend was £103.00 loads more than I wanted to spend, but we have just been eating the same old things so am trying some new recipes and needed ingredients I hadn't got! Will be making a paella tomorrow night and have a piece of topside of beef for Sunday - haven't had roast beef for ages, so hope it's nice!

    This is only your 2nd month taking part isn't it? So don't be too disheartened :) a lot of us struggle to stay in budget every month, but we keep trying. I think you may find it a bit easier once you settle into a routine that suits you. I've discovered (which is just common sense I know) that if I keep a running stock of meat (i.e. I never let it run out) I am now at the stage where the majority of the time, I never pay full price anymore for my meat. That also applies to mature cheddar, tea & coffee, all of which we get through an awful lot of, and when you don't have a very big budget to start with, constant savings like that go a long way to making your money go further, if you see what I mean :)

    £41.83 spent in A$da this week. Note to self *do not try and do the weekly grocery shopping on a migraine day. I did get some more cat food than usual though as it was on offer.

    Bit of a wobble this week, trip to Mr S for potatoes on Thursday ended with £11.49 spent, then a second trip yesterday for stuff for a weekend packed lunch and I spent £10.57:eek:

    So my running total is now £142.81/£240 and I still have 2 weekly shops to get out of that. Just about do-able if I can only stay on the NSD/Grocery Challenge wagon and we eat some bits out of the freezer, but there was nothing really to show for either of those shops so am a bit cross with myself :o
    Debt Free since Nov 11 (ish) (except the £118000 mortgage :o) as at Jan 2013 but still hanging around DFW as I need to Stay On Track.

    Doesn't the sun lift your spirits!

    I've just been to Lidl for the fillets offer they also have 5 aeros for a quid. Not an essential I know but they're great to hide away for when you want to offer treats!

    Bought a large chicken too as I want to try the lemon chicken idea that someone came up with (saved a few lemons in the hope I'd see a reduced whole chicken!)

    Tried to cook some chana dal yesterday in my thermos and... It works!!!! A great way to save energy cooking pulses that need hours!

    I'm gonna make a chana dal and spinach later ready for our curry meal tomorrow. Pud is already sorted (concrete chocolate n mint custard from my school days. Gonna make the custard tomorrow though!)

    I'm also dead chuffed that I haven't been boiling the kettle much at all. I keep a flask by the kettle, when it boils I pour it in ready for cuppas then I unplug the kettle as it is almost a reflex reaction when I'm thirsty to flick it on. This gives me a moment to realise that hey, boiling water is already there!! It REALLY works and I have a brew even quicker, yay!!! Good for the pocket AND environment!!
