Parking Fine even though I displayed a ticket

I have received a PCN from Hackney Council even though I paid and I have my ticket from the meter.
I sent a copy of the ticket to the council disputing the fine and I was told that the ticket was not displayed properly, and that I have a further 14 days to pay the £40 fine.
I wrote back saying that it was displayed properly, and asked for the PCN to be cancelled.
They have no written back to me with a picture of my car, but you can not see my ticket
and they have no increased the fine from £40 to £80.
I am not sure what to do now. I have my receipt showing I paid, and I really can't afford to pay £80, however I do not want it to increase further.
Just wondered whether I should cut my losses and give in, or continue to fight this out... but I dont know who to refer this to as its clear that the council are not going to budge.

Ask them for proof it wasn't displayed, such as a photograph?
If the price has already gone up, do you have much to lose (other than time and aggro) by continuing to fight it?
Also, this probably goes without saying but, do not send them the original pay and display ticket as it will mysteriously go missing.0 -

They have sent the OP a " picture " of the car.;)0 -
What I meant was a close up of the area that you are supposed to display the ticket in.
A picture of the whole car probably wont show anything in enough detail to be sure.0 -
I got one in Edinburgh when I had my ticket displayed, they had an image but took it so that the sun and clouds and sky were reflecting across the windscreen obscuring the ticket, I was absolutely fuming as it was done blatantly to get money from me.
Anyway, I took pictures there and then with the ticket on the screen then wrote a complaint to Edinburgh Council.
My main argument (apart from the blatant extortion) was that in order for them to fine me there would have had to have been intent not to pay. Because I actually had a ticket that intent was not there, whether it was on display or not.
They wrote it off, got a response in about 2 days from them as well but they wouldnt admit to it being their mistake, as you would expect.0
