Oxtail.................?

One of the contestants on 'Come Dine With Me' served slow-cooked oxtail the other day and I thought she would be slated 'cos sometimes they can be so b**chy on that programme. She was a real traditional cook. Everyone raved about it and she won the show! Never cooked it myself (or even fancied the soup!) and thought then, what am I missing out on !! Must try, agree thought it would be cheaper.0

It is definitely not as cheap as it used to be, probably because it has become fashionable. My butcher is pretty expensive (sorry Brokenwings). I've a feeling last time I saw a pack wrapped up -about 6-7 chunks of varying diameter it was around a tenner -but I may be mistaken.0
-
Ouch thriftlady now that is expensive and I wouldn't pay that. My butcher is pretty reasonably priced and knows that I tend to cook the less fashionable things so will always give me a shout when anything comes in.
Please don't say that oxtail is going to become fashionable the way lamb shanks did  They just got silly when the celeb chefs started using them. I guess if they do that will then cut me down to ox tongues which most seem to find revolting. There is one girl in the butcher shop that won't even handle them and she blanches when I walk in to get one :rotfl:0 -
Here in our part of Spain, oxtail is readily available but it's expensive0

basically its browned oxtail, potato, parsnip, carrot, onion, stock, tom puree, vinegar???, parsley, garlic herbs and seasoning
if you have alternative recipes id appreciate them very much
thanks
Wouldn't worry about the vinegar, and as already suggested a bit of red wine would be a good addition. Cook it as long as you want the slower the better, the meat just dissolves from the bones. If given a choice the thicker end of the tail is better than the thin end (bone:meat ratio is not good at the sharp end!)
It is one of the most delicious 'stews' you'll ever taste! Has no connection at all with stuff in tins called 'oxtail soup'. It was one of my all time favourite dishes until I gave up meat some 15 years ago, and it's one of the few things I still miss (bacon being another!)0 -
Oxtail is one of my faves too.

Not sure how much oxtail is in my local butcher (will check tommorrow) but it's £4.99 per kg at Waitrose:

Ah well, its called Oxtail Stew in this book:
1 oxtail
1oz plain flour seasoned w/salt + pepper
2 large onions
4 carrots, 2 turnips
1 pint hot beef stock
Cut oxtail into pieces + trim off excess fat, toss in seasoned flour.
Slice onions + carrots, dice turnips, then place all ingredients into the pot.
Put on lid, switch to auto setting for 10 hrs or setting 2 (slow, but not very slow)for 4 hours.
Check seasoning before serving.
Im sure you could adapt this to make it a soup rather than stew - blend all the lumps?
Funny - I have an ox tounge recipe in here too! This is an old instruction & recipie book for a Kenwood slow cooker my mum used to have when I was a kid, it has some old stuff in it - Brawn...tripe and onions...stuffed hearts...liver parcels...lol
