Hi there
Don't feel up to leaving the house today (was up until the wee hours after going to a concert in London) and want to do some baking, but only have two eggs!
All of my recipes seem to call for more than this - can anyone suggest any that my paltry two eggs will suffice for?

Weigh the two eggs. Measure out the same weight of SR flour (or plain flour and just add a teaspoon of baking powder), sugar and butter/margarine, add a drop of vanilla or the zest of one orange or lemon and use to make a sponge cake mixture. Divide it up into the holes of a muffin tin, filling about 3/4 full (you'll probably get about six, I would think), bake at 180º till done (check after about 15 minutes), when cool slice them through the middle and fill with something nice - whipped cream, lemon curd, jam, whatever you fancy0

if you have bananas you dont need any eggs at all, you can eat them for brekkie tomorrow!!
recipe for a vegan banana cake (american measurements)- 2 cups flour
- 1 1/2 tsp baking soda
- 1/2 tsp salt
- 1 cup sugar
- 1/4 cup oil
- 4 ripe bananas, mashed
- 1/4 cup water
- 1 tsp vanilla
Pre-heat oven to 350 degrees. Lightly grease a 9-inch square baking pan.
In a small bowl, combine the flour, baking soda and salt. In a separate large bowl, whisk together the sugar and oil, then add bananas. Add water and vanilla, stirring to combine.
Add the flour mixture, stirring just until wet.
Bake for 45 to 50 minutes, or until a toothpickIf at first you dont suceed .........try again0 -

You can replace the chocolate with whatever you have on hand to the same amount. I like to use a mix of chocolate and nuts.0 -
Thank you everyone - I only nipped away to do the breakfast washing up and have come back to lots of yummy sounding things! I'm going to have a browse while I have a cup of tea and then I'll get baking!

Have a try at a coconut cake.
1 cup co!!!!
1 cup SR flour
1 cup sugar
1 cup milk.
Mix all together and pour into a loaf tin. In the oven for about 45min-1 hr at gas4/ 180c. Really delicious and you can have it into the oven in literally 40 seconds!Father Ted: Now concentrate this time, Dougal. These
