Cake or biscuit recipe with only 2 eggs please!!

  • No I hung fire as I wasn't sure about the eggs :o The oven is on at the mo though, so I could pop it in if you see this ;)

    So, how did it go? Did you make it? My friend and I make this all the time as it is just the easiest.
    I have a recipe for a pineapple cake too but haven't tried it yet it's

    2 cups SR flour
    1 cup sugar
    450g can crushed pineapple

    Mix flour and sugar. Add in pineapple including juice. Pour into lined tin and bake at gas 4 for 40 mins. as I say, I haven't tried this but it sounds nice.

  • I'm a bit late here, but I use the Be-ro book or website regularly and do the Victoria Sandwich recipe, the mixture has two eggs and can also be used for chocolate buns, cherry buns and butterfly buns. My 5 year old loves them all :)

  • The coconut cake sounds fab, can I ask, is it a 1lb loaf it makes?

    I have the easiest banana loaf receipe ever...

    3 brown bananas
    5oz sugar
    2 oz butter
    1 egg
    splash vanilla extract

    Mix well then add

    5 oz self raising flour
    pinch bicarb

    Greased 1lb loaf tin at 160c for 45 mins. Best wrapped up until the next day of poss.

    Here you go:

    basic cake

    Cream together:
    4oz butter/marg
    4oz sugar

    Beat in:
    2 eggs

    Fold in:
    4oz SR flour

    This is the backbone of all my cakes. The same quantity of all ingredients but half of eggs, ie: 4oz of everything = 2 eggs, 6oz of everything = 3 eggs, etc.

    If you want lemon cake, add lemon zest to your mixture and put the juice onto your baked cake along with oodles of sugar, mmm

    If you want coffee n walnut, add a desert spoon of coffee and a handful of crushed walnuts.

    If you want coconut cake, add a handful of coconut to your mix and then spread warm jam onto your baked cake and top with desiccated coconut, mmm

    If you want choc cake, add 1/2 oz of cocoa but only add 3 1/2 oz of SR flour (so it totals 4oz of dry ingredients)

    If you want syrup sponge, just put oodles of syrup into your baking tin BEFORE you add your cake mix in. When serving, place the slice upside down so that syrup is at the top.

    IMPORTANT:

    If you own a microwave, ALL of the above recipes can be made in 2 mins!
    I call it the 2oz, 2 min cake.
    Just half all the quantities!!
    Try it, it truly works. You may have to adjust to 3 mins if your microwave is not very powerful.
