thought you had to write drivers number on v5

It's optional. When I've bought a car privately I never have although I'm unsure if those I've bought from dealers have had it written on.

There is no such thing as a European Driving Licence.

There are many websites which will sell you (without any checks) documents which appear to be an "International Driving Licence" or similar.
They are not even worth the plastic they are printed on, and if you produce one to the Police you will probably be arrested.
I presume that because such a document doesn't really exist, they can avoid prosecution for fraud.

If he has a Polish driving licence, that is a different matter. Put whatever details he gives you, on the V5.
My V5 states that the new keeper is not required by law to provide a driver number. In any case, If you are selling it to a company there is no driver number.
Just be satisfied that if the cheque bounces / the money transfer is reversed / the cash turns out to be fake / whatever; you can find him (nothing to do with his nationality, just common sense).

I read the OP as meaning that he has Polish Licence that is obviously within Europe.

    EU licences have driver numbers.

Indeed they do. On a Polish licence it's item number 5:

If you lend someone a tenner and never see them again, it was probably worth it.

    Hi,im selling a car to a polish bloke,who has a european licence,how do i fill out the v5
The buyers driving licence status is of no concern to you (either in law or out).
If you want his money then take it, if you want to play plastic copper then the buyer still has a valid licence regardless of where in the EU it was issued.
