  • How about mango and ginger? Stew mango gently, add a dollop of ginger jam, put a layer of vanilla-infused confectioner's custard in the bottom of the tart and top with the mango mixture.

    Or prunes stewed with some sherry, serve this in a pastry case made with an almond pastry (use ground almonds instead of some of the flour)? Top with a "crumble" topping with almond nibs.

    Well I'm making a millionaire's tart tonight so that would get my vote!!! I wish I could do a course like that, or any kind of cookery course TBH but I can't find anything at the local colleges :-(

    Prune d'Agen are my favurite things better than chocolate by far IMO. I'd never thought of making a pudding to evoke them, but what a BRILLIANT idea! Prunes, with almonds, a little pureed apple and Armagnac......oh, too delicious....I must by Armagnac next time I see it to try this!

  • Hmm, I have some rhubarb and ginger jam from last year where I slightly undercooked the rhubarb and it's still got a little too much 'bite' to it for jam, but it might be nice in a tart, sitting on top of some creme patissiere.

    Thinking about doing some tuile biscuits as a garnish, I just saw on a blog where someone made them with matcha powder and I'd love to try that but it's SO expensive :(

    Lisa26 - you'd need to do an NVQ Level 2 in professional cookery/some other chef type qualification before they'd let you on this one ;) It's a lovely course, really interesting. In fact I think they're now calling ABC Level 3 Patisserie. I have to drive 30 miles each way for it because our local colleges are rubbish when it comes to catering - one of them has a beginner's cookery class and the other has level 2 catering & hospitality etc but nothing beyond that.
