Ideas for stuff to put in tarts!

I hope the board guides don't mind me putting this here as I suppose it's not strictly speaking OS, but it kind of is as it's about cooking from scratch.
Anyway I'm looking for ideas. Currently I'm doing a Pastry Chef's Diploma and for our final exams in May/June we have to produce some really nice food, three items which can be anything we like. I thought of doing three different mini tarts/tartlets which I could dress up and make them look really posh - think 1 Michelin Star standard :rotfl:I'm thinking about it this far ahead because I'll need time to create and test recipes and fix any problems and think of accompaniments like ice cream etc.
So far I've thought of:
1. mini lemon meringue tart, or possibly blood orange if I can get some juice, with a spiky top like on the cover of this book
2. millionaire's tart (pastry base, layer of soft caramel, topped with chocolate tart filling
3. mini gypsy tart (I've never actually even tried a gypsy tart but like the idea of it)
4. something to do with frangipane and berries
I was wondering if anyone had any good ideas that I could try out. Doesn't matter if it's a bit old fashioned/school dinners as I can tart it up and make it a bit more modern (last place I worked at we had jam roly poly on the menu!) but I would love some ideas to play around with and if I come up with any good recipes for any of them, I'll post them here in case anyone would like to try them out

Probably a bit late to get them now but Seville orange tart is fantastic, can be like a lemon meringue pie or like a baked custard.
If you can still find the oranges, the juice and zest freeze really well so will keep for 6 months until you need them0 -
Mmmm orange/lemon meringue pie is my favorite. Would definitely vote for that! Other ideas - apricot frangipans, chocolate tart. Does it have to be sweet? What about a savory goats cheese + onion?0

What about a coconut macaroon or treacle tart or rhubarb and ginger? exams in may/june and I thought straight away - Strawberries! Americans make strawberry tarts apparently and I would eat anything with strawberries in it! also isnt it cherry season? or is that July? cherry tarts would be lovely too!0

for the millionaires I'd go with the v fashionable salted caramel - a wee bit more michelin starred than an average one - topped with dark rather than milk choc and a flake of maldon?
likewise seville or blood orange takes lemon meringue into a different league
fangipane and fresh cherries would be divine - especially if you infuse the frangipane with something to update itPeople seem not to see that their opinion of the world is also a confession of character.

Oh and it does need to be sweet rather than savoury, and I'm a bit wary of using stuff that won't be in season until summer as I need to be practising it now (although I suppose I can always get out of season strawberries, they just won't taste of anything!).0 -
re the orange/lemon tart...an alternative if you go for orange might be to dth the meringue, but brush the tart case with dark chocolate before putting the filling in. I shouldn't be publisising this, as its something I do a lot in ''fruit juice'' set tarts and it always gets an ''ooh'' or an ''ahhh'' at the dinner party table.0
