  • Have done very well this week and stuck to it exactly (although I think my memory is going - I keep having to come back to the thread to see what we're meant to be eating!) Thanks Penelope for starting the thread :)

Saturday - OH is away and I'm having savoury mince and jacket potato
Sunday - macaroni cheese with chopped hot dog sausage
Monday - OH treating me to a takeaway for Valentines
Tuesday - bolognese (with the LO meat from Saturday, in fact I will probably make it at the same time for ease!)
Wednesday - roast chicken (from last week), yorkshire, roast potato, veg and gravy
Thursday - BBQ pork steak with cajun wedges and roast veg
    Friday - Quesadillas

I think this is right, I did a full meal plan till the end of the month yesterday at work but I seem to have left it on my desk :rotfl: The good thing I have found is that I need to buy hardly anything for the rest of the month - a few bits plus fresh milk & fruit.

Breakfasts will be HM yoghurt and fruit, OH will take sandwich and fruit for lunch, I will take LO savoury mince for a couple of days and then HM soup and roll. Baking something this week, not sure what! Maybe lemon drizzle, and fairy cakes for packed lunches... Ooh lemon drizzle fairy cakes :T

I've adapted the principles of the my special K plan, as some of the meals on there weren't suitable, and I was getting bored with the ones that were. These are all suitable for pescatarians (no meat, but eat fish), and are low fat. I've not put in the snacks on here, although I've planned them - they are mainly fruit, and the occasional cereal bar.

    Saturday

Lunch: Lemon and coriander hummus with wholemeal pita carrot
Dinner (main meal): HM Sweetcorn fritters with avocado and tomato salsa and half fat herb creme fraiche, followed by low fat chocolate mousse

    Sunday
Lunch (main meal): Beanfeast chilli jacket potato, creme fraiche and salad, followed by kiwi fruit
Dinner: Vegetable soup with bread and butter

    Monday
Lunch: Falafel, tzatziki and salad pita, followed by sugar free jelly
Dinner (main meal): Veggie burger, courgette and couscous, followed by red grapes

    Tuesday
Lunch: Low fat cream cheese, pickle and lettuce pita, followed by an apple
Dinner (main meal): Spinach and ricotta tortellini in a tomato pasta sauce, followed by red grapes

    Wednesday
Lunch: Tuna, sweetcorn mayo and lettuce sandwich, followed by yoghurt
Dinner (main meal): HM veggie chicken and apple casserole with courgettes, followed by sugar free jelly

    Thursday
Lunch: Cream cheese, marmite and lettuce pita, followed by raisins
    Dinner (main meal): At M&D's

    Friday
Lunch: Low fat cuppa soup, bread and butter, followed by a carrot and a yoghurt
Dinner (main meal): Veggie nuggets, baked beans and HM wedges
Enjoy the little things, for one day you may look back and realize they were the big things.
