Thanks for starting us off again, PenPen! :T

My mealplan for last week has wandered off track a bit over the past couple of days, although as it's all been stuff from the freezer or storecupboard it's not the end of the world. I'm hoping to stick to this week's plan, though:

Friday - field mushroom and stilton 'burger' (served inna bun) with salad and chips
Saturday - takeaway - a rare treat after a hard week
    Sunday - pasta bolognese
Monday - moussaka with herby focaccia

Tuesday - Thai prawn and aubergine curry with coconut rice
Wednesday - chilli con carne and squash pasta bake
Thursday - aubergine and ricotta layer bake with HM bread of some sort

It's a bit heavy on the mince this week but I got a load on special offer at the end of last year and have been thinking that I really must start using it. :o I must also find a use for the clementines that are sitting in my fruit bowl - they're too sour to eat raw, so I'm thinking a cake of some sort may be in order.
Back after a very long break!

Monday - sausages with [STRIKE]ham and cheese potato bake[/STRIKE] potato wedges (I 'wedged' all the potatoes forgetting I was going to use them...doh!) and caramelised red onion

Tuesday - bean burger with basil mayonnaise

Wednesday - pasta with pesto, crème fraîche, peas and broad beans

Thursday - [STRIKE]Asian salmon with stir-fried noodles[/STRIKE] going to do the salmon like this recipe, still with noodles

Friday – risotto with bacon and peas

Saturday – chicken kiev with savoury rice (might change the rice actually)

Sunday – yorkshire puddings filled with mince and vegetables

Another 3 new recipes this week :) Lunches are never set as I tend to take bits I have left or that need using.

Slight change as I don't have many ingredients for the salmon recipe I was going to do, so will do the other one and use what I already have.

  • Thanks, PenPen for starting the thread. :) Here's what we're having this week:

    Monday: Chicken Biryani
    Tuesday: Spanish Omelette
Wednesday: Not sure yet, might be sausage casserole...
    Thursday: Lasagne c/w garlic bread
    Friday: Pork Fajitas
Saturday: Minced Beef & Onion Pie with Mash
    Sunday: Leftover pie & chips

I need to do a spot of baking, so there'll be a batch of rock buns for the tin, as well as a ginger cake (thanks for the inspiration, PenPen! When I saw that in your post, I just had to :D ). There'll be fruit as well, and I shall do the usual sandwiches or leftovers for lunch. I bought a packet of sushi rice with the intention of trying to make some of that for my lunches as I don't tend to eat very much at work - we'll see!

    Have a good week, everyone.

Hi everyone :) Hope you all have a good week x

Breakfasts are the usual toast with or without jam/peanut butter/yeast extract, or branflakes, or rice craspies or oats
Lunches are hm hummus sandwiches/on rye crispbread, hm scones or soup with carrot, raisins or other fruit

    Dinners will probably be:
Poss a valentines takeaway or a veg + cashew stir fry with HM noodles
Nut cutlets/veg fingers with vegetables and mash. Choc cake + custard.
Sun-dried tomato, watercress and olive stew with couscous
Butternut Squash and Pea English-style curry with rice
Butternut Squash and Pea Lasagne (with HM lasgne sheets)
HM pizza with crudites or hm coleslaw
Bean chilli with rice or couscous

Snacks/Afters can be fruit, carrots, nuts, crackers, HM baking - currently a choc tray bake, and will make flapjacks + another tray bake when choc cake runs out (using up choco soy milk so it will probably be another of the same.)

Suppers will be oats + strawberry soy milk for the girls, pear and cuppa for me, toast and cuppa for OH, or olives/carrots/peanuts/popcorn if we fancy it.
Love and compassion to all x
