  • Well, last week was not good for me. I came down with a horrible cold which left me lying in bed and the rest of the family making merry in the kitchen, ignoring meal plans. Still they did the washing up so not all was horrid!

It has left us with loads of extra veg as we get a veg box each week so this week has got to focus on using up and giving away. I have made carrot jam today which will have to be rebranded as Angel Hair Toast Topper or sommat similar and may become part of breakfasts or cake filler. This weeks meals are....

Sat - artichoke kedgeree with rosemary butter.
    Sun- pizza and chips
Mon - pinto bean and cabbage stew with dinner rolls.
    Tues - spicy vegetable couscous.
    Weds - lenten bake
Thurs - courgette pancakes with brie and broccoli
Fri - bean and beer casserole with dumplings.

lunches - sarnies, wraps and leftovers.
puds - inspiration .......... go on - hit me!
breakfasts - porridge or eggs or summat.

Due to health issues (Insulin Resistance, PCOS, Leidon Factor 5) I have no choice but to change my diet (to low GI and 120g Carbs) to help stop me from getting worse illnesses! So here is my new meal plan!

Saturday 12th - Vegetable Fingers w/ Broccoli and Cauliflower
Sunday 13th - Roast Chicken, Wholewheat Yorkshire Pudding and Broccoli
Monday 14th - Nutty Chicken Curry w/ 1/2 portion of Wholewheat Rice and Cauliflower (White Rice for the boys)
Tuesday 15th - Smoked Mackerel w/ Beansprouts w/ half Wholewheat Pitta Bread (Fried Potatoes for the boys)
Wednesday 16th - LO Nutty Chicken Curry w/ 1/2 portion of Wholewheat Rice and Cauliflower (White Rice for the boys)
Thursday 17th - Gyros Meat and Tzatziki w/ half Wholewheat Pitta Bread (white Pitta Bread for the boys)
Friday 18th - Onion and Mushroom Scrambled Eggs with Wholewheat Bread (Kiev, Chips and Beans for the boys & Friend)

I had to make wholewheat bread to accomodate my new eating plan. Which so far has been relitively easy because I know I can't have what I used to, so I am doing well with what I can have.
We spend money we don't have, on things that we don't need, to impress people we don't like. I don't and I'm happy!
