If i buy an orange san francisco can i get it unlocked to use either my O2, or Virgin sim card in? If so, will most of the apps work still?
And wheres best place to get it unlocked?

All apps will still work, they're tied to your Google account, not the SIM.
Unlocking is taken care of here: http://arrtoo.x10.mx/unlockBlade.php0 -

Just to clarify that the Orange branded apps that come with the San Fransisco mostly won't work unless accessed via Orange's mobile network, but seeing as most of the Orange apps (not the Android Market Apps) are pretty useless and easily replaced with Market Place apps it shouldn't be a problem.
You'll have to set up a couple of things such as the APN settings ("access point names" found in Menu>Settings>Wireless and Networks>Mobile Networks>Access Point Names), voicemail number (mine always reverted to Orange's voicemail number when I remove the battery!)
When I used my San Fran on Tesco I seem to recall that the Orange apps like Orange Wednesday, Orange Maps, didn't work - they never worked via Wifi even with an Orange sim as I recall.

Do the job properly and get rid of the Orange firmware as well

Stick a non-Orange SIM in it, and it will prompt you for the code after it's booted up.
