    Packet Smash (Buttery is nice)
    330g-500g fat free cottage cheese
    2-3 eggs

    Put smash into bowl, mix in 330g cottage cheese & 2 eggs - mix until forms a dough - if too dry add the other wet ingredients

    Roll out, cut into scone shapes & bake in oven for about 20 mins at about 200 - until golden brown

    Some variations

    Sprinkle some cheese on top for cheesey scones
    Put cheese in mixture
    Use flavoured cottage cheese (check syn values)

    Just to confirm - you use the smash dry - like a substitute for flour - no need to make it up with water!

    This is really yummy. It is from the SW book. I use it with SW KFC style Chicken loads.

    SW barbecue sauce
    free on all programes
    serves 4
    freezable

    fry light
    1 onion roughly chopped
    1tsp mild chilli powder
    8floz passata
    3tbsp sweetener (adjust to taste, I use less)
    4tbs balsamic vinegar
    1tbs worcestershire sauce
    1/2tsp mustard powder
    seasoning

    Spray a pan with fry light and saute the onion over a low heat until softened.

    Add everything else and bring to the boil, then reduce and simmer for 10 mins until thickened.

    Season to taste

    SW KFC Style Chicken

    1 HEb of bread
    1 tsp dried mixed herbs
    1 tsp garlic granules
    1/4 tsp mixed spice
    A good few grinds of black pepper

    Blend the lot in a food processor until you have your herby breadcrumb mix.

    Chicken -breasts in chunks/whole or drumsticks
    Chicken Bovril

    Coat your meat (de-skinned of course) in Chicken Bovril, you don’t need to use tons of it, just a very thin coating will do.

    Once coated, roll in the breadcrumb mixture.

    Then bake in the oven on 150-180 for approximately 40 minutes or until golden.

    You will have to experiment with the amount of bread crumbs you need as I tend to just guess and make enough to freeze.

    I love this and it is soooo easy too

    Chicken Tikka
    Uncooked chicken cut into bite size chunks (the marinade below is enough for 3 or 4 breasts)

    Marinade
    Small tub of very low fat yoghurt (the Syn free kind)
    Half a teaspoon of the following: Cumin, Garam Masala, Turmeric, ginger (fresh or jar)
    Salt & pepper
    Chilli powder (to your taste)
    Good squeeze of lemon juice - about half a lemon
    1 clove of garlic chopped or crushed
    Food colouring (orange/red)

    Mix everything together and bung in your chopped chicken, mix it all up so all the meat is covered nicely. Cover and marinade in the fridge for at least 2 hours (up to 24hrs)

    When you are ready, knock off any excess marinade from each piece and cook off either under the grill or a frying pan with frylite. (try to get it a bit charred too)

    To serve, squeeze a bit more lemon juice over the top and sprinkle with fresh coriander.

    1 can of water chestnuts, chopped finely
    1 tbsp dark soy sauce
    2 tbsps oyster sauce(syns?)
    1 tbsp dry sherry or sake(syns?)
    1 tsp sweetner
    1 tbsp sesame oil(syns?)

    - Separate the lettuce leaves, wash and pat dry
    - mix together soy sauce, oyster sauce, dry sherry and sugar
    - put the pork mince in the wok and cook until browned, set aside
    - heat the sesame oil in the wok, add garlic, ginger and spring onions until aromatic
    - add the water chestnuts and celery and cook for a few minutes
    - add the sauce mixture and the pork, reduce the mixture to your liking
    - to serve spoon into lettuce leaves and wrap

    Chicken curry - there are lots of free recipes that you can use, but i use the Win Yip curry paste which has a few syns in it - if you google chinese chicken curry i'm sure you'd find a free one

    BBQ sauce for pork pieces - i got this off a blog ages ago, its lovely - no syns

    1 onion, peeled and roughly chopped
    1 tsp mild chilli powder
    225ml passata
    3 tbsp artifical sweetner
    4 tbsp balsamic vinegar
    1 tbsp worcestershire sauce
    1/2 ts mustard powder
    salt and pepper
    Pork, chopped into strips of pieces (i don't use ribs as you would have to syn them)

    - soften the onion in a pan with a bit of frylight or water (or use the microwave)
    - add the chilli powder
    - stir in passata, sweetner, vinegar, worcestshire sauce, mustard powder and salt and pepper
    - simmer for 10 minutes until thickened.
    - brown off the pork in a pan, add the BBQ sauce cook until pork has cooked through
    I let my mind wander and it never came back!
  • I made a really lovely soup today that I wanted to share. I love the New Covent Garden Spicy Butternut and sweet potato soup but it's so expensive - I just can't justify the cost. I could also eat at least 2/3 of the carton and it's 17.5 syns for the whole thing :eek:

    This is different from the one posted before as that one is from their cookbook and has chickpeas and lime juice etc in but I looked at the list of ingredients on the carton and made my own! It was gorgeous and I made a huge vat and it probably only cost me a few £. And even better - it's SYN FREE on Extra Easy and Green. There is 1 tsp of honey in there but as that is only 1 syn and this made at least 4 portions it's pointless to count it!! All my measurements are "ish" !

    2 onions - chopped
    2 cloves of garlic - minced
    1/2 of a large butternut squash - peeled and diced
    1 large potato - peeled and diced
    2 carrots, peeled and diced
    1 large sweet potato - peeled and diced
    1 tsp of runny honey
    grated ginger or teaspoon of lazy ginger
    1.5 tsp ground cumin
    1 tsp ground coriander
    0.5 tsp paprika
    0.5 tsp white pepper
    0.5 tsp cayenne pepper
    0.5 tsp cinnamon.
    750ml ish of Chicken or veg stock
    salt
    frylight spray

    Fry your onions and garlic in frylight until soft. Add all of the spices and cook gently for a few minutes. Add everything else and cook for about 20 mins or until all soft. Add the teaspoon of honey. Whizz in the pan with a stick blender then season to taste.

    This is lovely, very spicy. It is free on Green and Extra Easy (not sure about red, never do red days!) if you use Frylight, or 2 syns for 1 teaspoon of olive oil. Helps if you use a non-stick frying pan.

    Chachouka
    Serves 4
    olive oil (use 1 teaspoon = 2 syns or sub with frylight= Free)
    1 tspn cumin seeds
    1 large onion, finely sliced
    1 garlic clove, crushed
    1 red pepper & 1 yellow pepper, sliced
    ½ teaspoon hot smoked paprika
    A pinch of saffron strands
    400g tin tomatoes
    4 eggs
    Salt and pepper

    Heat oil/frylight, add cumin seeds, fry gently for a couple of mins
    Add onion, cook gently for 8-10 minutes
    Add garlic and peppers and cook gently for 20 mins
    Add paprika, saffron and tomatoes with their juice. Cook gently for 10-15 mins, stirring from time to time. Preheat oven to 180oC/ Gas Mark 4.
    Spread out into an oven proof dish, make 4 hollows in the surface, break in eggs. Sprinkle with salt and pepper. Bake for 10=12 mins, until the egg white is set and the yolk is still runny (or however you like it).
