Here you go Kevie - this is the recipe for rice cakes from my 1939 Household Book (definitely old style
)
RICE CAKES (for 4 people)
2 cups cooked rice ( i use basmati, it's about 1/3 cup uncooked)
2 tbsp milk
1 beaten egg
1/2 tsp salt
1/2 tsp baking powder
1/2 cup flour
1/2 = half
I use 2 basins. In the first one sift the flour,salt, & baking powder. In the second, beat the egg & add the milk. Stir the eggy mixture into the flour & then add the rice (looks like there's far too much rice at first but it does all mix in).
Then fry in tablespoons on both sides till brown, turning once.
In the book it has them as a breakfast recipe, to eat with bacon. (cooking the rice cakes in the bacon fat). My OH has had them for lunch, cold. I've kept the mixture overnight in the fridge without a problem (I use oat milk).

I signed up for milkandmore, had my first delivery yesterday of my "free" stuff - milk, bread, eggs, yogurts, cereal, just some bits and bobs to keep us going till payday, very welcome! I have decided to keep the regular milk delivery anyway as we get through so much - about 20 pints a week easily, it might stop me popping to the shops "for a few bits" and coming out £50 lighter!Let's get ready to bumble! :rotfl:0
