I used to use up all odds and ends of meat and veg including lettuce by doing tortilla wraps for tea. There's also lettuce wraps, like you'd get ina chinese restaurant, where meat such as mince is in the middle.0

Lettuce wraps are outs as we cut chunks out of the lettuce - so no whole leaves - good idea though thanks.
Might try pea and lettuce soup - though I did make a giant batch of veggie soup today for the rest of the week.

Just slice really fine and use it in stir fry, wilt it at the end of cooking everything else.0

Also useful - can i do anything else with lettuce apart from salad and lettuce and spinach glut and keeping lettuce fresh

Boil some frozen peas for a few minutes, add strips of lettuce and cook for 3-4 mins till wilted. Drain, then sprinkle some balsamic vinegar through. Serve hot as a vegetable and wait for the compliments.

Not as interesting as most of the above but if I have any leftover lettuce I always just put in saucepan with little bit of water, simmer till wilted, cool it and then freeze for use as veggie stock when I'm making soup. You'd be surprised how much tastier soups are with this plus I always think healthier than stock cubes.0
