I don't know what availability is like but I've been to Norcenni Girasole in Italy (a couple of years ago now) which was absolutely lovely (best ice cream I've ever tasted!). It's a bit of a journey from the airport as we flew into Pisa but it's fine if you know where you are going.
And Duinrell in Holland is great if you have kids or teenagers (I'd imagine). They have a mini theme park on site (which is free) and a water park on site which was about 3 euros for entry I think which was also a lot of fun.
If I remember right (as these were a little while ago now) they weren't my first choices so I imagine that availability wasn't too bad.
