I've been looking through my pantry and I've got two 500g jars of Homepride Potato Bak , Garlic and Herb flavour. I have never used this before, and can't even remember why I bought it in the first place..probably a BOGOF or something and seemed like a good idea at the time..
I'm thinking of a creative way to use it up..any suggestions anyone? Dont really fancy it for its intended purpose with spuds...

Also lurking in there are two tins of evaporated milk. I definitely have no clue why I bought those!! Any suggestions for them? Please, not Del Monte Fruit Cocktail and that on top, takes me back 40 odd years to my least favourite childhood pudding!!
I'm guessing it can't be used in place of cream in a savoury sauce - I often do a cream and mustard sauce for pork and if I can use it instead of cream it would be great..

ETA- just had a though re the Homepride Potato Bake, I've got some chicken in the freezer, I wonder if it would work in the slow cooker, like a chicken casserole with some veggies thrown in

  • Am liking your idea for the chicken bake :)

As for the evap. I remember my Mum whisking evap. until it thickened and then mixing it with a made-up still liquid jelly for a sort of mousse. This was back in the late 70s though :rotfl:

    Fudge

    Rice pudding

    Creamy custard

Dilute it down and use as milk

  • I like the idea of the chicken bake too or how about using it with pasta and some chopped up bacon and mushrooms.

Evap is great for adding to soups as well as mulledwine's ideas.
Blessed are the cracked for they are the ones that let in the light

Lol...I still make it and my kids love it. You need to keep whisking (with a hand mixer) when you add the jelly though, to make it as foamy as possible. Then pour it into serving dishes asap as it will set to a soft mousse.

Otherwise you can just dilute it down and use it like ordinary milk, in milk shakes or whatever. I do this when we go camping. It just tastes like UHT milk when diluted.

    Hi Dawning,

I can't help with the Homepride potato bake as I've never used it, so I've no idea what it's like, but this thread may help with the evaporated milk:

evaporated milk for microwave tablet. I will dig out the recipe, I think its 1 small tin 12oz of sugar and 4oz of butter. You put it in the boggest bowl you have a nuke it for four minutes then whisk for a minute then nuke again for two minutes and wisk, repeat until you've cooked for about 12mins or so, until its a rich caramel colour and thick, then set in a tray and mark when almost cool into squares and cut when completely set.

Thanks to everyone for the replies!
I had no idea about using diluted evap milk like normal milk - I usually have UHT anyway so if I can get the amount of water right (can anyone give me an idea how much please?) I probably won't notice a difference - I only really use milk in tea and coffee.

Well, in the interests of science I went through to the larder and found a couple of tins because I was certain there used to be a dilution guide on the back of the label. Not on the back of Carnation, apparently, but it says on the back of the Tesco own brand tin that diluting one part milk to one and a half parts water will give the equivelent of full cream milk. It also says to use it undiluted in tea, coffee and cocoa.

I'd dilute it down and freeze it if you only need a little at a time tbh. I can state for a fact though it makes great rice pudding if dilluted down!
