    Hey,

    I don't like slushies you buy from shops - they are usually lurid colours and pretty sickly. So I've been experimenting making them at home and have finally got it sorted.

    You need an electric blender - one of the ones with a jug at the top. Cheap as you like - mine cost £15.

    Add ice cubes, about 10 per glass of juice. Making 3 or 4 glasses worth seems to give the best slush consistency.

    Turn on blender at the lower setting and immediately add a little fruit cordial. The blender will start mixing then stop (the blades will whir around uselessly). When this happens add a little more liquid.

    I use fruit juice at this stage - a little at a time, waiting until the blades stop working before adding a little more. There's no reason why you can't use just cordial. If so dilute it a little - but not as much as usual as there's a lot of ice there.

    Fruit juice by itself doesn't work so well - I think the sugar in the cordial helps the slushy blend better - you only need to use a little.

    After a while you'll see a lovely slushy mixture that should be mixing well. Leave it like this for 30 secs-1 min and serve.

    A little expermentation is required - but it's worth the effort. I often freshly squeeze fruit for a slushy.

    You can also make some nice cocktails with this method!

    I had something similar on my trip to Thailand a few years ago, made with freshly squeezed lime juice, sugar and ice - so refreshing and tasty.

    I think i'd be tempted to freeze juice into cubes as I hate it when slushies turn white as its just ice left :D

    They do a fab kiwi one in Egypt - ooooooooooooh I could just manage one now :D

  • Hey Frugal - freezing juice doesn't work with the blender method - I tried it! You need to add liquid otherwise the blender doesn't blend. I know what you mean about the ice left over - with the blender method this doesn't happen.
  • Any high sugar syrup should have the qualities required for a slush puppy. However you won't make a true slush puppy. What makes a slush puppy is the combination of a high sugar syrup, a freezer and a giant corkscrew with strategically placed holes.

    The custom corkscrew makes sure the entire mix is constantly moving in all directions. The sugar solution and constant motion causes the liquid to go well below zero (most professional machines chill to -2 degrees) whilst only forming small crystals of ice. The sugar free slushies presumably use something other than sugar to prevent large crystals from forming (possibly pectin or Xanthan gum as I've seen these used in a lot of lollies)
