Does anyone eat the bacon they crisscross on top of the turkey?

We just got a turkey breast roast this year. I read this thread before, so I roasted it, basting regularly, then put bacon on it for the last 40 mins - perfect.0

We always have mashed potatoes with chopped leeks in them (an alternative colcannon) alongside the roasted potatoes. The bacon is chopped up and mixed into them. It is a sort of homage to my Gran's stuffing made of potatoes and bacon - although I think she probably originally did it to go with goose. Anyway, it is still nice with turkey.0

Absolutely! We save it for Boxing Day breakfast on toast along with poultry leftovers, stuffing and any of that delicious stock jelly which is lurking in the bottom of the roasting pan.0

God its so yummy. I pick at it whilst carving and then it goes into the making of the gravy. The gravy is always so lush......wouldnt be without it TBH.
