Festive non-christmas cake?

:) We don't have a christmas cake as neither of us like rich fruit cake, we don't have christmas pudding as it's too heavy.

I was veering towards a sponge cake with the fruit mixed in but can't seem to find a recipe.

Can't make a yule log as I haven't got a swiss roll tin.

any other festive cakes that you make because you're not a christmas cake fan?

    What a bout a dundee cake if you want a lighter fruit cake? or a cherry cake would be red studded and festive but light and bright.:)

    Havent made one ... but a year or so ago we had some choc orange fruit sponge puddings .. little individual ones ..bought on special :) .. they were slightly lighter more like spotted !!!!!! texture wise .. similar amount of fruit as normal but lovely & dark from the choc & with a freshing citrus tangy .. shouldnt be too hard to recreate really.... just beyond me .. bet someone here can tho lol!

    I've made Nigella's Chocolate Fruit Cake for the last 2 years and will make another this week. It looks like a traditional fruit cake, but smells and tastes much nicer! Spicy, ffruity orangey and very CHOCOLATEY :)

    I love Christmas cake, pudding and mince pies, so won't be much help :p

    How about profiteroles?

    Delia's chocolate torte (this freezes well if you have leftovers, as it's quite rich).

    Nigella's Christmas Rocky Road - brazil nut, cherries and marshmallow, though you can vary this if those exact ingredients aren;t to your taste :)

    You could try Panettone; or Bolo do Rei ( King's Cake ), the Portugese / south American Christmas cake which is similar to Panettone, but you can make it with either glace fruits or chestnuts.
  • I just use a normal baking sheet for swiss rools. What about Nigella's Chocolate pudding? We are having wither that or some sort of chocolate orange sponge which I shall invent on the day.

    I also don't actually own a baking sheet, I just line the grill pan with greaseproof paper when baking cookies :o


    Thanks all, might attempt a dundee cake or the chocolate torte thing. Just wanted something christmas-sy without the heavy cake bit :)

    Can't beat a panettone, light but delicious.

    I used to have a recipe for a candian fruit cake, sponge wth a few raisins / sultanas / currants / peel, also tinned pineapple pieces and a couple of spoonfuls of whiskey....again a really good teatime treat!
