can I freeze sheeps milk cheese?

or failing that something to do with it. I have a big block that I didnt realise was up to its sell by date and I dont just want to throw it. Its fairly crumbly in texture-bit like feta type cheese

    You can freeze feta, although it is always a little more crumbly after defrosting, so I don't see why you should not freeze your sheeps' milk cheese.

  • I've frozen feta and it was fine :)

  • I buy sheep and goats' milk cheese regularly and feeze them, they will be fine. :)

    they freeze okay, but you could use some up by making cheese tartlets (nice recipe for christmas - for the buffet lunch boxing day?)
    cheese tartlets
    either shortcrust or filo pastry
    cheese
    some basil leaves
    cherry tomatoes or sundried tomatoes

    either cut your shortcrust pastry into rounds to fit in bun tin or cut filo pastry into squares and layer two or three layers (brush with oil or melted butter between each layer) and place in greased bun tin.
    put a generous tablespoon of cheese into each pastry case
    top with a basil leaf
    then with either half a cherry tomato or a generous piece of sundried tomato
    bake in a mod to hot oven for about 15 minutes until the pastry is cooked and golden
    dont worry about the cheese melting - it doesnt have to!
    serve hot, warm or cold!
