Ive never been able to make a decent white loaf using any of the recipes in their manual, ive found them bland & dense. I have managed to find a recipe that tastes nice & a little less dense, but still not managed to make a nice fluffy loaf, that everyone would go wow over. If anyones managed it, id love to know their recipe:D

What flour do you use? I've found some flours (esp. Morrison's!) give me a smaller, dense loaf. Sainsbury's and Asda's - a fair bit lighter. Best results with Carrs and Hovis. Wholemeal flour sems to have less variation in quality and Dove's is cheap in Asda at the moment.
"Cheap", "Fast", "Right" -- pick two.

I managed to pick up a copy of ' The Ultimate Bread Machine Cookbook ' from a charity shop a couple of days ago, 30p bargain!

The question is, where it shows ingredients for a medium loaf, do I use the large loaf setting on my Fastbake?

Just picked up a Morphy Richards fastbake off freecycle...just waiting for the kneading paddle to arrive from the manufacturer (this one was missing, cost £3 to replace!) then I can join in the fun!!

blitz- just like you I have had my MR FB for quite a few years sitting on the top of my kitchen cupboards after the same disappointing results from the manual BUT I have just made my first loaf using the recipe that is on the side of the packet of sainsburys strong white flour and it turned out lovely!!! I even had to try some straight out the BM just to make sure and it was wonderfully light and airy but now i have indigestion dammit!!!

    Recipe as follows:
    320ml 20fl oz warm water
    500g 20oz strong white flour
    25g 1oz butter
    1 tbsp sugar
    1 1/2 tsp salt
    1 tsp fast action yeast

I put it in my BM in that order and used setting 2 (large loaf not dark crust) hey presto 2hr 50 mins later a lovely loaf!!! good luck

I may give this a go today. So you used the French bread setting and light coloured crust, how did this compare to a shope bought sliced loaf?

What I mean is was it a type of close knit bread or more open like when you cut into a baguette?

When I put mine on a setting 2 large loaf, it comes up as 3 hrs 50 (not 2h50) - I am giving your recipe a try, will let you know how it goes!:D

Hi all interested in my recipe! lol I feel so important!!
I didn't melt the butter before i put it in but it was soft.
My BM is a good few years old, just been in hibernation so I'm sure there are new models with different settings. setting 2 on mine says basic white large (1 1/2 lb) and is 2hr 50mins. The brown bread settings are 3hrs + but not the white.
It wasn't a french bread setting so the bread was more dense(little bubbles) a lot closer to shop bought but much more flavour. I was really pleased with it- I hope it works of someone else too!! good luck and tell me how it goes.
I have my BM going at the mo with my first try of Apple Braid dough so fingers crossed, cos I need to take something to bribe my mum tommorow so she will have my kids over night sometime next month!!!
