    Thanks guys! I cant believe Ive made it to my age (30 something!) without ever having cooked a roast, but i bought a slow cooker (thanks again to you lot!) and have been doing beef in it, so i decided id go for broke!

  • I don't par boil mine first. I don't even heat the oil but will try this next time I make them to see if it makes any difference.

    I par boil them if I'm making wedges but not potatoes - never thought about that before :rolleyes:

    This is how I do potatoes, Parboil for about 10 minutes, scope one out with your veg spoon and try to score with a fork. If the fork scores then they are ready.

    Drain into a colender and place a plate on top of colender (sp) shake very hard over the sink, this roughs up the outer part of the potato.

    Then spread out on baking try. With pasty brush paint all over with cold veg oil, be liberal. Then into over for 30-40minutes in a gas oven that is (no experience of electric so couldn't tell you on timings.
  • I par boil my potatoes but not parsnips and I don't roast them in the same pan as parsnips never get as crispy as potatoes. I heat the oil and before I put the potatoes in I sprinkle about a tablespoon of seasoned flour over the drained potatoes in the pan and give them a shake, then I put them in the oil and make sure that they are turned over a bit to get them covered in the oil. I put them back in the oven and don't look at them for 35 minutes and they are usually lovely and crispy by then, but sometimes they need a few minutes longer (I think it is to do with the variety of potato). Parsnips I just peel and cut into long lengths and put into cold oil and toss them to get them thoroughly coated in oil, without having any pooling in the roasting tray. I then sprinkle them with a little sea salt and pepper and roast for about 30 minutes. After this I drizzle over a little honey and return them to the oven for another 10 minutes or so.

    Parboil for about 5 minutes, whilst they're doing put a dish with a dollop of goose fat in the oven (at about 200deg or 180 if fan-assisted). Transfer to hot fat, turn every 20 minutes or so, done in a little bit less than an hour, depending on how crispy you like them.

    I've done it this way for about three years and my wife says they're perfect every time! (She's probably reading this now too!)

    I never par boil me spuds,just heat a little olive oil in a metal dish while I cut the spuds in half,place them onto a clean tea-towel and sprinle a small amount of salt onto them,to draw out excess water.Then take the hot oiled tray out the oven and rub the spuds with the tea towel to dry them and pop them in the oven for about 40 mins,I like mine well done on the outseide with a nice dark brown colour,but nice and fluffy and white in the middle.

    I dont think you can go wrong with roast spuds any way you cook them.

    You do know now you have done your first roast, you will end up having more than just a sunday roast!! We have a least 3 a week!!!
