My roast pots and parsnips are not the best in the world for some reason, but I always parboil for about 5 mins, then bung in the oven around the meat I'm cooking for about an hour or a bit longer. Every now and then I just baste with oil.Pink Sproglettes born 2008 and 2010

boil the potatoes in lightly salted water for 7/10 mins, drain the water, shake the pan with a lid on so the pots rough up at the sides, put them into the oil in the oven that is spittingly hot, roast for 40/45 mins depending on how large the pots are.
quarter the parsnips add bashed thyme, honey and olive oil, cook in gas mark 7 for 20/25 mins-lovely xxx0 -

Jamie oliver and Deliah smith have websites though as well as sainsburys which is a great site where you put in what you want to cook at the top right hand side and they come up with recipes etc xx0 -
i never cook the pots with the meat or you loss the juice from the meat for the gravy. after the meat is cooked i take it out and cover with foil. i put the meat juice in a pan and use the meat tin again for the pots. put oil and some butter in the tin and put back in the oven when pots are par boiled drain and shake about a bit then put in the over on a high heat. give them a shake every twenty min and in about an hour you will have crispy and fuffy on the inside roast pots.:jBaby Finley :j

If you like your roast spuds like me,with little crispy bits, put them into cold water, bring to the boil, boil for 10 mins, drain them, bang them about in the drainer to get edges all fluffy, put them into smoking fat, careful you don't get splashed, cook in a hot oven about 200 for about half an hour, turn them once and leave for about another half hour, voila, lovely spuds.
Parsnips I just put in the hot fat with the spuds, they don't need to be par boiled.
Good luck.Debt at highest £102k

If you like lots of gravy keep the potato water to add while you are making it.
